Happy Saturday everyone!
I’m going to keep this short because I have two recipes to make and test today. My husband is off bike riding (56 miles today) I think. I love that he is exercising more and getting out and getting some fresh air. I think exercise is so important, not only for the physical exercise itself, but also for peace of mind and sanity.
Tomorrow, we head over to Schusters Farm here in Wisconsin and will be going on a tour, going through a corn maze, going on a hay ride and exploring the pumpkin patch!! I’m sure there will be apple cider donuts and photos of pumpkins involved as well!
For this week’s meal plan, we’ve got fall on the brain! Who else is excited for fall?!!! It’s my favorite season because of the produce! We’ve got butternut squash, soup, a skillet recipe and sliders! Have a great week you guys!
Monday
Butternut Squash and Bacon Macaroni and Cheese from greens & chocolate. I am absolutely making this mac and cheese recipe! I can’t wait!
Prep Ahead: You can roast the butternut squash and cook the bacon in advance.
Tuesday
Skillet Fajita Chicken and Rice from Spoonful of Flavor. Skillet dinners are the best and so easy to throw together on a weeknight!
Wednesday
Vegetarian Pasta e Fagioli from me! This is one of my absolute faves for the fall! It has butternut squash and swiss chard and is so delicious and flavorful! I hope you guys try this!
Thursday
Quinoa Vegetable Soup from Lauren Kelly Nutrition. This looks like comfort in a bowl and it’s packed with goodness!
Prep Ahead: You can chop the veggies ahead of time.
Friday
BBQ Pulled Chicken Smoked Mozzarella Sliders from Flavor the Moments. These sliders look SO good. . my husband has already requested these!
Prep Ahead: The pulled chicken may be made in advance and stored in the fridge or even frozen until ready to heat and serve!

i love these meal plans. i wish i could be as organized as you! i feel like i’m always deciding what’s on the menu at 5pm. NOT ideal. and 56 miles? wozer! i think that’s more than i’ve done in my whole life, forget just a day. have a great weekend!
