It’s that time of the year! When your Facebook feed is filled with photos of your friends’ kids with their backpacks! Back to school! Depending on where you live in the country, some of you are already geared up and heading back to school. My friends in California have already started the new school year and it’s been so great to see so many smiling faces.  . the kids and the parents!

We don’t start school until September 1st but I’m already in full swing preparation! We just registered and took school photos (any other schools do this in the summer?) and now I’m focusing on healthy breakfast and lunch ideas.

My kids have to be at the bus stop by 7am. Yes, you read that correctly, 7am. So, during the school year, it’s very early days for all of us. I’m a morning person but my kids are not so it’s hard getting them up and out of bed.

Some mornings I have to bribe them with a bonus treat for breakfast or tell them which fun snacks that I’m sticking into their lunchbox. My oldest is obsessed with avocados. If there’s an avocado involved, she’s there. Just like her momma.

Either way, these are extremely quick and easy to make. The waffles go directly into the toaster oven and while they are cooking, I slice the avocados. These mini waffle breakfast sandwiches are a healthy and balanced breakfast and just what kids and adults need in the mornings. I’ve even tried these with sliced hard-boiled eggs (which you make the night before, peel and have them ready to go in the fridge for the next morning); basically, don’t skip the eggs! Eggs are a great source of protein!

Mini Waffle Breakfast Sandwiches

Ingredients

  • 8 Van’s Whole Grain Mini Waffles Totally Original, toasted
  • Dijon yellow or honey Dijon mustard
  • ½ cup fresh spinach
  • 2 eggs scrambled and lightly salted (if desired)
  • 1 to mato sliced
  • 1 ripe avocado sliced

Instructions

  • To assemble: spread some Dijon mustard onto four of the Whole Grain Mini Waffles. Top each one with some spinach, some of the eggs, a slice of tomato and some avocado slices. Top with a Van’s Whole Grain Mini Waffle over each one and serve and enjoy immediately.

    Kids in my area started school last Wednesday, and I’ve already noticed it a lot quieter in my neighborhood! That’s nice that your girls start school later. These mini waffle sandwiches are too cute, Alice! I would love a few of these for breakfast!

    As someone who works in a school, we’re there super early (in the 6s) to get ready for the kiddos. I’m in prep week right now, and it’s quieter without the students for sure!
    These waffle sandwiches rock. I’m sure they keep your adorable posse full for many hours!

    7 am to catch the bus?! Wow, that’s super early for the kiddos!! I would imagine preparation for the day is key. So great that your oldest loves avocados. That’s definitely a good thing!

    I just love food in mini form and these look absolutely delicious! Breakfast sandwiches are the best, especially when you combine them with waffles. Like a two in one breakfast, lol. Though, I would even eat these for dinner ! I have to try these soon 🙂

    7 AM for the kiddos?! That is nuts! I always had a long bus ride here going to school because we lived in the country, but even so I only had to be on the bus at 7:45, then got to school at 8:45. 7AM is crazy! My kids would be so beat I think, I hope your girls get some time to rest during the week! And good luck to you! These breakfast sandwiches look like the perfect start to the day!

    I’m with your kids, I am NOT a morning person at all.. although I don’t sleep in, I also don’t function well either. haha. But THESE adorable mini waffle breakfast sammies would totally have me hopping out of bed! These are seriously the cutest breakfast sandwich EVER, Alice! And they look seriously delicious to boot!!
