Kid-Friendly Baked Egg Tater Tot Muffins! These delicious, savory baked egg tater tot muffins have everything you want in a great breakfast! A baked egg, spinach, ham and crispy tater tots on the bottom! Your family is going to love these!

Over the summer, I had to go on a lot of work trips. I loved meeting some new people and traveling to different cities and meeting the people behind some of the brands that I work with. While I was gone, my husband was, of course, watching the kids. And apparently, while I was gone, he established a weekend routine breakfast fun outing to McDonald’s.

Phoebe and Madeline tasted the McDonald’s hash browns for the first time and it was love at first bite. Now, nothing else is the same. Not even my homemade “hash” browns.

But maybe tater tots?

Kid-Friendly Baked Egg Tater Tot Muffins

So, then it came to me ..  tater tot muffins!!!! with baked eggs on top! Baked egg tater tot muffins.  All the deliciousness of the tater tot PLUS the healthy ingredients that I feel good about.  and you need to bake the tater tots beforehand so they remain somewhat crispy on the bottom. I mean, come on. .  who doesn’t like food in muffin form?!! And they are portable!

What I love about these muffins, and my girls too, are the baked eggs on top. Over the summer I was frying up eggs almost everyday. This is their new favorite way to eat eggs and I got my girls to like the runny yolk!! What can I say, soft baked eggs and poached eggs are my fave!

Baked Egg Tater Tot Muffins

Note for the cook: You can use a 6-cup or half of a 12-cup muffin pan. This recipe makes 6 muffins.

Equipment

  • muffin tin

Ingredients

  • 18 to 20 frozen tater tots
  • ½ cup shredded mozzarella cheese optional
  • 1/2 tomato diced
  • ¾ cup fresh baby spinach leaves
  • 2 to 3 slices thin turkey or ham deli meat cut into smaller pieces
  • 6 large eggs
  • Salt and pepper to taste
  • Fresh chives finely diced for garnish

Instructions

  • Preheat your oven to 425 degrees and spray or grease 6 cups in a regular sized muffin pan. Place about 3 to 4 tater tots into each cup and bake for about 18 to 20 minutes or until crispy.
  • Remove muffin pan from the oven and sprinkle on the shredded mozzarella cheese over the tater tots. Then, evenly sprinkle on the diced tomatoes and lay a few spinach leaves and the deli meat pieces into each muffin cup. Gently press down ingredients if needed. When you crack your egg, you don’t want the egg to spill over.
  • Carefully crack an egg over each muffin cup, on top of the deli meat, keeping the egg in the muffin cup. Season with salt and pepper and bake until the eggs have set to your desired doneness, or for about 15 to 18 minutes. Again, the time depends on how "done" you want your eggs. You can start with 10 to 12 minutes and then check your eggs. Do not over bake the eggs. Remove from the oven and let the muffins cool in the pan for about 3 to 5 minutes before removing from the muffin pan. Garnish with the fresh, diced chives and serve immediately. Enjoy!

Notes

For Make Ahead:
They are better when enjoyed straight from the oven but if you want to make a big batch and freeze: You can bake according to instructions above, let cool and then freeze! You can place into a freezer safe container or freezer safe plastic bag. When you're ready to enjoy, simply reheat in the oven. Bake at 350 for about 12 to 15 minutes; longer if needed.

    These are beyond amazing, Alice! McDonald’s has got NOTHING on breakfast at your house! The tater tot bottom is totally genius! Seriously, I was about to go make myself breakfast and now I am pissed I don’t have tater tots because all I want are like a dozen of these muffins! LOVE LOVE LOVE.     So cute, I think my hubs would be making routine stops to McDonald’s too if I was away 🙂 These tater tot muffins are so much fun!!!     What an absolutely brilliant idea! These would be perfect for feeding my hungry teenagers (and me)! I love those hash browns too, nothing quite like them really.. And yay for you on the runny egg part. It’s the only way to eat eggs in my opinion! Wish we could get those pasteurized eggs in Seattle!

    Alice – We recently had a tater tot fiasco at my house. An opened package fell into the ice bin in the fridge and so tater tot were coming out of the ice dispenser on the front of the refrigerator! I need to go out and buy another package, so that I can make these delicious baked egg muffins. 🙂

    I am ALL for eggs that won’t make me get foodborne illness. These eggs open up a whole new world of possibility!
    And baking tater tots into the bottom of an egg muffin is some kind of brilliant, Alice. It’s like you took the Mickey D’s concept and made it healthy, tasty and NOT greasy. In other words, you just made breakfast so much better!
