It’s Breast Cancer Awareness Month. And, for a lot of people, a reminder of when they have supported friends and family, ran a race, walked for breast cancer awareness, supported through the Susan G. Komen foundation or Cook for the Cure.

Roasted Raspberry Cinnamon Cupcakes

Ingredients

For the cupcakes:

  • 3 cups fresh raspberries plus for more topping; split
  • 1 teaspoon plus 3/4 cup granulated sugar; split
  • 2 teaspoons ground cinnamon; split
  • 1 stick unsalted butter; room temperature
  • 2 large eggs; room temperature
  • 1 1/2 cups sifted all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup sour cream at room temperature
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon raspberry extract

For the Buttercream:

  • 2 cups powdered sugar
  • 1 stick unsalted butter at room temperature
  • 1/4 teaspoon raspberry extract
  • 1/4 teaspoon of salt

Instructions

For the cupcakes:

  • To roast the raspberries: Preheat your oven to 450 degrees. Arrange the raspberries in a single layer on a parchment paper lined baking sheet. Sprinkle 1 teaspoon of sugar and 1 teaspoon of ground cinnamon over the raspberries and bake for 20 minutes. Remove from the oven and let cool.
  • Reduce the oven temperature to 350 degrees. Line a 12-well muffin pan with cupcake liners and set aside.
  • Using your stand mixer fitted with the paddle attachment, beat the butter and the 3/4 cup of granulated sugar together, on medium high speed for about 6 minutes or until very pale and fluffy.
  • While the butter mixture is beating, add 2 cups of the roasted raspberries to a food processor (or blender) and puree. You are reserving one cup of the roasted raspberries for the buttercream. Then, if you'd like, pour through a fine mesh strainer to remove the seeds. Repeat this process with the remaining 1 cup of raspberries, but keep separate because you will use this for the buttercream.
  • Back to the stand mixer: add the eggs one at a time, mixing well after each addition, stopping to scrape down the sides and bottom of the bowl as needed. Reduce the speed of the mixer to low, and add the puree made from the 2 cups of raspberries and mix well.
  • Using a separate medium sized mixing bowl, combine the flour, remaining teaspoon of cinnamon, baking powder, baking soda, and salt. Slowly add half of this mixture to the stand mixer, mixing on the lowest speed until combined.
  • In a separate small bowl, whisk together the sour cream and vegetable oil together, and then add to the stand mixer. Add the remaining dry (flour) ingredients to the stand mixer, and mix on low until until incorporated, being careful not to overheat. Add the vanilla and raspberry extract and mix until just incorporated, again, using a rubber spatula to scrape down the bottom and sides of the bowl as needed.
  • Scoop batter in the cupcake liners until each one is about ¾ full, being careful not to overfill. Bake for about 17 to 21 minutes, or until a toothpick inserted into the center of a cupcake comes out mostly clean but still moist.

For the buttercream:

  • While the cupcakes are cooling, prepare the buttercream frosting. Clean your stand mixer and fit with the whisk attachment. Add the powdered sugar and butter and mix on a low speed until combined, then increase the speed to medium-high and continue to mix until fluffy and light.
  • Add the remaining cup of raspberry puree, the raspberry extract and salt. Beat until the frosting is a light cotton-candy pink and the puree is fully incorporated.
  • Frost the cupcakes using a piping tip of your choice and top with a single raspberry on each cupcake. Enjoy!

    Life without a stand mixer is pretty impossible. I remember back in college trying to cream butter and sugar together in a bowl until fluffy by hand, or one awful time, beating egg whites until stiff. I think it took two hours.

    I would love to win because I love to bake and am burning out my hand mixer with the amount of stuff I bake. October is my birth month so it is my favorite month of the year. My Godmother’s birthday is 2 days before mine, my father’s is 2 days after mine, my uncle’s is 3 days after mine, and one of my best friends gave birth to my “nephew” on my 30th birthday. October is full of celebrations and football.

    This recipe came handy today since I was looking to bake something for my hubby while he goes out of town. Love raspberrys, and I love to try new things. This definitely caught my eye with roasted raspberries in recipe … My favorite season is fall. We have 6 birthdays total thru fall season.So, it’s plenty of get together in our house. And I am the only one who’s been backing for all occasions lately. Which I love . I love to bring joy to my family and friends thru my cooking and baking. Which my kitchen aid doesn’t , it makes those crazy sounds like first model Ford??? So it would be nice to win something like this.

    I have been wanting a Kitchen Aid stand mixer for a few years. I have developed a love for cooking and baking since my son is older and I have more time.     Ahhh–I always love your giveaways, Alice.     What an adorable looking mixer. It’s so pretty! My grand-kids and I love to bake, so a new mixer (with some power) would be nice. Our mixer is pretty inexpensive , so it struggles when making some dough’s for cookies or candies. 🙂

    October is a good time to do self-exams in the shower for breast lumps. Of course, every month would be better for self-exams. We know that we should get mammograms at 50, despite conflicting research. I am getting my first one this month. I am already a cancer survivor with having uterine cancer. I feel it’s important to do everything possible to catch cancer in the early stages.

    I have had two aunts who are survivors of breast cancer and when they both were told they are clean it was the best day of their lives. Cancer is such a evil thing that we deal. Everyone please check themselves every month you are the best person who will know when something needs to be checked.

    I would love to win. My grandmother passed away with breast cancer secondary back in the 80’s and I miss her dearly. Treatments have come so far over the years, but have so much farther to go. This would be very special, I currently only have a hand mixer.

    On Breast cancer awareness month: please listen to your body! The Dr.’s don’t always get it right. Always get a second opinion! My sister was diagnosed at 29, yes, only 29 yrs old. Thank God she is here with us still, as it has been just over 5 years since she had a double mastectomy. Take care of yourself for your children and family’s sake:)
    I would love to win so I can perfect my recipes because my dream is to own a small bakery someday, with my husband who is an awesome bread man!

    Cancer awareness/fighting for a cure is a large part of my life. Besides being involved with various charities that raise funds for cancer research, I also have family and friends who either overcame cancer or was taken by cancer. Early detection is crucial and life saving in many cases! This kitchen aid would help me combine two of my fav things… Kitchen appliances and cupcakes for a cause!

    For me October signals a possibility of new hope and season that brings change and vitality to life. Dealing with women battling with breast cancer has been my way of life in my career and I feel I am the one who is being blessed by these wonderful, gracious, courageous women who show me that nothing in life is insurmountable and to do it with class!

    October as Breast Cancer Awareness month means a lot to me as I am a 5 year survivor of breast cancer . I just saw the cancer doctor this morning and she is releasing me back to my regular physician. Yea!

    I love KitchenAid mixers, but I also love & admire the company as a whole. I made a cupcake for their #10000Cupcakes cause. I started a Cookies for the Cure Bake Sale at my local bank many years ago after a teller there got diagnosed with breast cancer. She’s a survivor & now, every year, they raise money through a bake sale every Friday in October and donate the proceeds to Susan G. Komen.

    I have always wanted a stand mixer, though I cannot say bad things about my trusty hand mixer! And October is especially important to me as my niece has cancer; she has established the Stage IV Life Metastatic Breast Cancer Foundation (StageIVLife.org) . She is continuing to live life to the fullest with every ounce of her being. We, her family & friends, are not only proud of her, we are inspired by her.

    I think the dedication of October as Breast Cancer Awareness Month is a great awareness campaign. I have lost family members to the disease, and my hope is that donations increase to help further research and prevent future cases.
