Happy Saturday you guys! As you are reading this, I am probably up in the air somewhere flying back home. Living in Madison is great and flying in and out of the airport is also great, because our airport is so small (maybe 15 gates max?). I love flying out of Madison because everything is so efficient and you’re usually not waiting too long for anything. The only downer is there are a lot of connections in Chicago and Minneapolis (read: not as many direct flights). So, today, I will be making 2 connections . . I have to wake up at 3am, be ready to head to the airport by 4:30am PST and will be home by like 4pm central time.
Needless to say, it’s going to be a very long day. I can’t wait to tell you guys about my trip! That will happen in a few weeks. . so until then, let’s get ready for the new week ahead of us with this great meal plan. Make one recipe, make them all, it’s up to you! I hope you can find some meal plan inspiration here. And obviously, all of you live all over the country (and some, in different countries). We’re in a weird in between state with the weather. Prep Ahead: The focaccia dough may be made ahead and baked either the day before or the day your serving the pizza.
Thursday
Green Goddess Quinoa Bowls from greens & chocolate.
Prep Ahead: You can cook the quinoa and make the green goddess sauce ahead of time.
Friday
Watermelon Berry Salad from Spoonful of Flavor.
Prep Ahead: You can make the dressing in advance and refrigerate until ready to serve. and if you have different cookie cutter shapes, have fun with it!
