Cottage cheese egg omelette! This is my version of the cottage cheese eggs viral recipe. This is a fabulous way to add additional protein to your eggs. Rich, creamy and so flavorful, I hope you try this!
Friends! It’s 2024!!! I know for many the new year brings hope, excitement and good energy. I hope you all feel this way. . I certainly do! On Instagram, I saw a lot of people making lists: In and out lists. . what’s “In” for 2024 and what’s “out.” I loved reading Mindy Kaling’s lists: What’s In: Meal prep, Victorian gowns, long wet wavy hair, over dressing, 10,000 steps, working hard, trench coats and more. What’s OUT: HIIT workouts (sorry Mindy, don’t agree with this one), strip lashes, revenge, diet soda, QR code menus, gel nails (what do we think of this) and more.
From all the lists I read, my in’s and out’s are simply this for the new year: IN: prioritize time for yourself (taking a walk, getting a manicure, closing your bedroom door, take the time you need to recharge and don’t feel bad about it), strength training, prioritizing protein, meeting with friends in person, having real conversations and meal planning. What’s OUT: pleasing people, commenting on people’s appearances on social media, spending time with people who don’t lift you up, and not putting your cart away at the grocery store.

Cottage Cheese Egg Omelette
Since we are prioritizing protein, I wanted to share this delicious recipe! On TikTok, I saw this viral recipe but wanted to put my own spin on it. I love cottage cheese and wanted to cook it as little as possible and retain the texture. I hope you try this and if you do, please let me know what you think!
Cottage Cheese Egg Omelette
Ingredients
- 1 tablespoon avocado oil
- 3 large eggs whisked
- 1/3 to 1/2 cup cottage cheese
- salt and pepper
- finely diced green onions or chives
- fresh dill for garnish
- chili oil olive oil* optional
Instructions
- Using a small pan over medium heat, add the avocado oil. After a minute or two, add in the whisked eggs and turn the heat to medium low. When you start to see the outer edges of the eggs being cooked, use a rubber spatula to bring the eggs in from the outer edges in and repeat. Keep doing this until the eggs are at the consistency you want. I don't flip my eggs but you can if you want to fully cook your eggs on both sides.
- Add the cottage cheese on top over half of the eggs and fold over the other half, covering the cottage cheese. Remove from heat and season with salt and pepper, garnish with the green onions and fresh dill and add a light drizzle of the chili oil olive oil if using. Enjoy!
