Protein Rich Loaded Baked Potatoes!! Tuna, cottage cheese and ground turkey are just some ways to enhance your baked potato game! Try one of these new versions tonight! 

Baked potatoes are one of my favorite meals to make! They are so easy and you can easily set out a bunch of different toppings so everyone can customize and make their own. Easier for mom and everyone is happy!

Now, my family is definitely more traditional and love just butter, cheddar cheese, crispy bacon and green onions on their baked potatoes, but I always love changing it up a bit!

Enter my Protein Rich Loaded Baked Potatoes!! 

Honestly, I think baked potatoes can be the vehicle for pretty much anything. I just saw these Taco stuffed baked potatoes, I’ve done pesto grilled potatoes so I thought, add pesto and I had some leftover blended tuna so this one was born! And for me, I think adding cottage cheese was a no brainer. It’s so good. I don’t know why I didn’t do this sooner! 

What interesting toppings do you like to add to your potatoes? These can easily be a full meal. Add a side salad or some steamed vegetables and you have dinner! 

Make Ahead

The beauty of baked potatoes is that they are so easy to make and you can make them in advance! Bake them the night before and refrigerate overnight. When you are ready to eat them, simply warm them up and then put on all of your toppings and you are good to go!

Ingredients

  • 4 baked, cooked potatoes* sliced in half
  • pesto see above for recipe
  • 1 can tuna water drained from can
  • 2 to 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • salt and pepper
  • cottage cheese
  • green onions or chives diced
  • pickled red onions see above for recipe

Instructions

  • *To see how to prep and make the baked potatoes, click here. For the tuna, mix together your tuna, mayo and mustard. Season with salt and pepper to taste. Set aside.
  • Once your baked potatoes are fully baked and ready, allow them to cool for a few minutes. Slice open with a knife and stuff: add the pesto and tuna and top with the pickled red onions if using. For the next potato, slice open with a knife and stuff: add the pesto and cottage cheese and garnish with green onions or chives. Enjoy!
