Strawberry Salsa Avocado Boats! Healthy, quick, delicious and so easy to make! You’ll be making and eating these all summer long!
It’s been a while since I have posted. I just got back from two trips: 1) to Madison, Wisconsin and then 2) Indio/Los Angeles, CA with my family. It’s so good to be home! And we actually leave for another trip on Friday!
This summer, for me, is all about quick and easy recipes! I’m also trying to eat more fruits and vegetables. I love foods and recipes where there is little to no cooking involved. We have another heat wave coming so if I don’t have to turn on the oven, that works for me!
Strawberry Salsa
Yesterday, we had a ton of strawberries that needed to be used up. We also had a big bag of tortilla chips so this strawberry salsa was made! Very similar to mango salsa, this recipe is the perfect, zippy, refreshing pick me up you need!
After some dicing and chopping, everything comes together in seconds. Enjoy this with chips, with grilled chicken, or grilled bread (drool!), it’s so good! You have to try this!
Strawberry Salsa Avocado Boats
In keeping with my wanting to eat lighter and a little healthier this summer, we made these avocado boats! Now, these are not my baked avocado boats – nothing is going in the oven. You just need to select and use a ripe avocado and the salsa goes right in. Delicious!
Strawberry Salsa Avocado Boats
Ingredients
- 1 pint strawberries hulled and diced
- 1 cup cucumbers diced
- 1/4 cup fresh cilantro chopped + more if desired
- 1/4 to 1/2 red onion diced*
- 1 lime zest + juice
- 1/2 tablespoon honey
- jalapeños or other chili peppers diced for some heat; optional
- Kosher salt and pepper to taste
For the Avocado Boats:
- 2 large ripe avocados sliced in half lengthwise
- balsamic glaze optional but highly recommended
- Maldon sea salt flakes optional but highly recommended
Instructions
- To make the strawberry salsa: Mix everything together in a large bowl from the strawberries to the salt and pepper. Taste and adjust anything as needed.
- To make the avocado boats: scoop out more avocado flesh if needed and eat (to make more room). Do not throw that away! Fill in with the strawberry salsa. Drizzle with some balsamic glaze and season with a little Maldon sea salt flakes. Enjoy immediately.
Notes
- Tomato, cucumber and onion salad: mix together diced cherry tomatoes, cucumbers and more of the diced red (or white) onions. Season with olive oil, apple cider vinegar (or balsamic vinegar) and salt and pepper.
- Jarred grilled marinated artichoke hearts with balsamic glaze and Maldon sea salt flakes
- Tuna salad
- Chicken salad
