Hey guys!
So, I finished the first week of my nutrition class!!! I am learning so much you guys. . I can’t wait to get back home, sit down and start digesting everything I am learning and, most of all, getting into the kitchen to test some new recipes!
If you follow me on snapchat (hipfoodiemom1), you can see what I do at school everyday . . from 9-12, we’re in lecture (I try to snap key slides like the one above) and then we’re in the kitchen cooking from 1-4pm. It’s great! This week we learned about aquafaba!!! Do you guys know what this is?! Amazing!
I am staying with my dear friend, Susie, who lives in Brooklyn, so I take the train everyday into the city. I feel like a real New Yorker! I had a great meeting with this guy, who is my new agent! I am so excited you guys! Look out for some great things ahead!

Monday
Honey Pineapple BBQ Chicken Sandwich from Flavor the Moments.
Prep Ahead: The BBQ sauce may be made in advance and the pineapple may also be prepped ahead.
Tuesday
Slow Cooker Pulled Pork Banh Mi from greens & chocolate. Doesn’t this look amazing?!!
Prep Ahead: the quick pickled veggies should be made at least a day in advance. The pork marinade can be made in advance.
Wednesday
Thai Chicken Salad Wrap with Blueberries from Spoonful of Flavor.
Prep Ahead: you can grill the chicken ahead of time and then assemble the wraps when ready to eat.
Thursday
Spinach Berry Smoothie from me! I love this smoothie recipe you guys! You have to try this!
Prep ahead: Freeze your ripe bananas beforehand. You can peel and break them into pieces, or slice them up. Throw them into a zip top bag and freeze!
Friday
Mixed Berry Mason Jar Salad from Lauren Kelly Nutrition. I love mason jar salads! These are perfect to pack and bring for lunch!
Prep Ahead: Chop vegetables ahead of time. You can prepare the dressing ahead of time too.

I have to try that no-fish fish sauce recipe. Kenny isn’t into the fish, so that would be perfect. Keep sharing what you learn!
