I never used to be much of a soup fan. But ever since we moved to the Pacific Northwest where it’s freaking cold, I have seen the light. Creamy, a light broth, with noodles, whatever. . give me a big bowl of soup any day and I’m happy.

You perform miracles in your kitchen! This soup looks so thick, creamy, hearty and delicious but it doesn’t have cream or bacon. Amazing! I love roast cauliflower so I can’t wait to try this potato soup with your unique twist.

Ooh, yum! I’ve recently re-discovered the joys of soup. It’s been super cold and rainy in Houston (well, for Houston) and nothing feels better than a hot bowl of soup for dinner. And I happen to have a potato and cauliflower chilling in my fridge! I might try an adapted version of your soup tonight–I don’t know how it will turn out using only 1 potato instead of 2 pounds haha…but perhaps I’ll just cut the recipe in half and see how it goes! Alice, I made a riff on this last night and LOVED it! Mostly just caramelized onion, potato, roasted cauliflower and vegetable broth, but super tasty! I realized in looking back through my CookingLight mags that I’d dog-eared the page, but totally forgot about it. Thanks for the inspiration to actually make it!
