Cottage cheese scrambled eggs! Rich, creamy, cheesy and so delicious! Plus, this is a great way to get some extra protein!
If you’ve been following me for a while, you know that I love cottage cheese. I also love getting in some extra protein whenever I can. For those of you who don’t know, getting in that extra protein is so good for you! It also helps with building muscle if you are weight training, which I am, and trying to tone up. Protein rich foods also keep you fuller for longer.

Initially, when I combined cottage cheese with my eggs, I did it omelette style; as seen above. This is for the cottage cheese texture lovers. The texture stays in tact and you are basically filling your omelette with cottage cheese. Some of you didn’t like the cold-ish cottage cheese with the warm cooked eggs, even though the cottage cheese gets a little warmed up naturally when placed into the eggs. . so I scrambled them.
Cottage Cheese Scrambled Eggs
This method mixes the eggs with the cottage cheese and then cooks everything together. Here are some tips: if you don’t like the texture of cottage cheese, you can throw everything into a blender and blend them up and then cook them. Also, adding the cottage cheese to your eggs creates a lot of excess liquid that comes out of the cottage cheese. I don’t know about you but I don’t want any excess liquid/water on my plate so I simply used a paper towel to absorb all the liquid before plating the eggs, simple! I hope you try the recipe!
Cottage Cheese Scrambled Eggs
Ingredients
- 3 large eggs
- 1/2 cup cottage cheese
- 1/2 to 1 tablespoon avocado oil
- salt and pepper
- green onions for garnish
- chili oil optional for heat
Instructions
- In a small mixing bowl, mix together your eggs and cottage cheese. Heat your pan over high heat. After a minute to two, add the avocado oil. Pour in the egg/cottage cheese mixture and let cook for a minute or 2.
- When you see the outer edge of your eggs starting to cook, use a rubber spatula to bring the eggs in (from the outer edge, in). Turn the heat down to medium and continue pushing the eggs in, and mixing and flipping if needed to let them cook. Alternatively, you can just use a rubber spatula and mix the egg/cottage cheese mixture in a circular motion to let them cook.
- When all the eggs are cooked through (to your desired doneness). Remove from the heat and plate. I like to use a paper towel to soak up any excess water/liquid from the pan so that doesn't end up on my plate. Season with salt and pepper to taste, garnish with some diced green onions and chili oil if desired. Enjoy!
