Sweet Potato Frito Pie!!! Or should I say loaded sweet potato frito pie!! Game day food at its finest. Sweet and savory with a kick! I hope you try this!

As you know, I’ve been on a sweet potato kick! Healthy, filling and so delicious. What’s not to love?! With the Super Bowl coming up, I wanted to share something indulgent and delicious. Now keep in mind, I get carried away when I’m shooting my videos and tend to make the food bigger. Don’t ask me for macros or calories or nutrition information. That’s not what this is. And as far as portions are concerned, this is probably enough for 2 people or one hungry person.

If this looks appealing, just try it and make it as big or as small as you want!

Sweet Potato Frito Pie

Recently, I tried a local BBQ place, I’m not going to name the restaurant because the service wasn’t great and the food was just ok. For me, a BBQ place needs to have great tasting sides in addition to great tasting BBQ. Is that too much to ask? I don’t think so. I know so many BBQ places that do this right. At any rate, the service kinda sucked (even though it’s a brand new place) and I was literally the only person there. I tried all the sides, their corn bread and they even had a Frito Pie. 

That’s where I got this idea. 

I took one bite and unfortunately the chili wasn’t great and it I let it sit for a while and then the fritos got soggy. I think this Sweet Potato Frito Pie is wayyyyyy better. And you must make my chili recipe down below! Hope you try this!

Sweet Potato Frito Pie

Ingredients

  • 2 sweet potatoes washed, scrubbed and pricked with a fork
  • olive oil extra virgin
  • salt and pepper
  • sour cream
  • Original or Chili Cheese Fritos
  • beef chili with beans see my recipe below
  • cheddar cheese freshly grated
  • green onions, scallions or chives finely diced
  • Hot and sweet jalapeños

Instructions

  • Preheat your oven to 375 degrees. Rub the olive oil over the sweet potatoes and season with salt and pepper. Place prepped sweet potatoes on a parchment paper lined baking sheet and bake for 45 minutes to 1 hour depending on the size of your sweet potatoes.
  • Cut sweet potato open and add some sour cream. Mash the sour cream into the sweet potato so it melts a little. Add some Fritos, the chili, the cheddar cheese, and garnish with the green onions and the hot and sweet jalapeños. Make your second sweet potato Frito Pie. Enjoy while hot!
