White bean and farro salad! When you need a little more than greens! Arugula, cannellini beans, farro, shallots and more in a light oil and vinegar dressing! So good!

Yesterday was Father’s Day and we took advantage of the outside grills here for the first time. It was seriously glorious. Grilling, eating outside and having the pool right next to us. The kids had a blast. And now there’s hope for s’mores over an actual fire now. If you watched my Instagram story from yesterday, I showed the outdoor/deck area, complete with fire pits!

Honestly, I haven’t had much motivation to exercise. .  but now that summer is here and we’re looking at 80/90 degree temps on the regular, all the shorts, tanks and summer dresses are coming out of my closet. For me, that’s reason enough to hit the online workouts again.

To feel comfortable in my clothes again. To actually put something on that isn’t a sweatshirt and sweat pants. My gym is supposedly opening up again on Friday, June 26th and it’s almost too good to be true. My hair salon is re-opening on Friday, June 26th, as well. These are the two places I have missed the most. It’s funny, now I don’t even care about my nails, which do look like crap but who really cares.

How do we feel about places opening up? Are you guys back at work now? Will you be going to the gym? Restaurants?

If you asked me this question a few weeks ago, I would have jumped at the chance to eat in a restaurant and go back to my gym. Now, I’m not so sure. I’m still fully on board and supporting restaurants through curb-side pick up and maybe even outdoor dining, even though we haven’t done it yet but I am going to wait a little longer before going back to my gym. Even though I am dying to exercise and spin again with my community.

And because I know I’ll get some comments and private direct messages. .  yes, we did just get back from going to the Jersey Shore. Yes, we did stay in a hotel. But we were still wearing masks, social distancing and still took precautions and literally cleaned and wiped down everything. I am 100% ok with staying in a house or hotel if you want to get away. In fact, we will probably go away again next month. Just not sure how I feel about the gym at this point. What do you guys think?

White Bean and Farro Salad

With the hot temps and my desire to eat lighter these days, there are a lot of salads coming your way. I love that salads are so much more than lettuce and greens on a plate now. They are heartier and more filling, with delicious add-ons.

This white bean and farro salad is just that. If you are trying to eat less meat but still want a protein source, this salad is for you. Cannellini beans are also a good source of B vitamins, including B12. We hope you give this recipe a try! The recipe is from Real Simple Magazine. I added sliced raw radishes for color, crunch and texture and felt it needed a little more so added some balsamic glaze on top as well. Enjoy!

White Bean and Farro Salad

The original recipe is from Real Simple Magazine. I added sliced radishes and felt it needed a little more so added some balsamic glaze on top as well. I also switched up how the salad is made. The prep time below includes the time you want the salad to sit with the dressing so the flavors meld together. Don't skip this part.

Ingredients

  • 1/2 cup farro or brown rice
  • 1 (15 oz) can cannellini beans drained and rinsed
  • 5 to 6 cups or handfuls baby arugula + assortment spring green mix
  • 1/2 cup raw radishes thinly sliced
  • 1 small shallot thinly sliced
  • 1/4 cup olive oil extra virgin
  • 1/4 cup apple cider vinegar
  • 1 teaspoon kosher salt
  • 3/4 teaspoon black pepper
  • 1 cup feta cheese crumbled
  • 3 tablespoons fresh dill finely chopped
  • balsamic glaze for garnish

Instructions

  • Cook the farro (or brown rice) according to package directions. Set aside.
  • Using a large mixing bowl or large shallow dish, toss together the cooked, slightly cooled farro or brown rice, beans, baby arugula + assortment spring green mix, radishes, shallots, oil, vinegar, salt, and pepper in a large bowl. Let stand for 10 to 15 minutes.
  • Add the crumbled feta cheese and toss together to combine. Garnish with the dill and some balsamic glaze. Serve and enjoy!
