Hey guys! Happy Saturday!
This weekend is jam packed so I am up early, trying to get one last photoshoot in. Today, we’re going to our first Wisconsin Badger’s football game! Woot woot!!! The whole family will be sporting red. After the game, I head over to pick up my salmon from Kwee-Jack Fish Company. They go up the Alaska and get wild caught Alaskan salmon. I don’t remember how much I ordered but I have to find some time to clear out our freezer today! If you’ve never tried wild caught Alaskan salmon, check them out. It’s freaking delicious!
And tomorrow, my husband and our dear friends are doing Bike The Barns! It’s a charity bicycle ride/tour (35 miles?) that raises money for local CSA’s! I can’t wait! I will try to share as much as I can on snapchat!
OK, on to the meal plan! We’ve got some great recipes for you guys this week! Three recipes down below use quinoa so make a big batch and store in the refrigerator and then, you can easily whip up these recipes!
Monday
Lemon Rosemary White Bean Toasts with Mushrooms from Spoonful of Flavor.
Tuesday
Red Quinoa Butternut Squash Kale Salad from me! This is the perfect recipe to usher in fall and break out some butternut squash!
Prep Ahead: The quinoa can be made the day before and stored in the refrigerator.
Wednesday
Sweet Potato Brussels Sprout Quinoa Bowl from Lauren Kelly Nutrition. Make some extra quinoa from the day before and make this recipe!
Thursday
Pesto Zoodles with Tomatoes and Mozzarella from Flavor the Moments. Pesto zucchini noodles! If you guys have never tried this, you need to!
Prep Tips: You can spiralize the zucchini, make the pesto, and oven roast the cherry tomatoes in advance. In a pinch, you can just use fresh cherry tomatoes also. Grilled chicken may be added for animal protein.
Friday
Butternut Squash and Black Bean Bowls with Chipotle Sauce from greens & chocolate. I’m definitely making this one! Looks so good!!!
Prep Ahead: You can make the sauce, roast the squash, and make the quinoa ahead of time.
