I am on a flight out of NYC today and headed back home to Dallas. I’ve been away for 2+ weeks and cannot wait to see my girls and give them a hug. It’s been the longest, most fabulous, fun-filled, informational, packed two weeks ever!
We’ll relax for a few days in Dallas and then head home to Madison .. I cannot wait to sleep in my own bed again and get back into the kitchen. If you follow me on snapchat (hipfoodiemom1) and now Instagram (instagram stories), you know I’ve been cooking up a storm everyday at school. The best part? Well, there’s three things: learning so many new and fabulous, healthy recipes, eating all of the delicious food . . and. . not having to wash any dishes. That, my friends, has been the best.
On to this week’s meal plan! I can’t wait to try the Greek Veggie hummus wrap and the Easy Roasted Tomato Garlic Pasta!!! And actually, ALL of these recipes look freaking fabulous so all of these will be happening in my kitchen very soon! I hope you are able to try some of these recipes! Artichoke and Pesto Chicken Salad from greens & chocolate.
Prep Ahead: You can prep the chicken salad in advance.
Tuesday
Grilled Peach Crostini with Arugula, Prosciutto, and Goat Cheese from Spoonful of Flavor.
Wednesday
Chickpea Burgers from me!
Prep Ahead: You can prep the chickpea burger patties in advance and keep in the refrigerator until ready to cook.
Thursday
Easy Roasted Tomato Garlic Pasta from Lauren Kelly Nutrition.
Prep Ahead: You can roast the garlic and tomatoes ahead of time.
Friday
Greek Veggie Hummus Wrap from Flavor the Moments.
Prep Ahead: The hummus may be prepared in advance and the veggies may be prepped ahead.
