Hey guys! I hope everyone is off to a great start of their weekend. Today and tomorrow are going to be super busy for me. I have a ton to do before I leave next week and I’m going to try to shoot two videos today! Fingers crossed! Also, later this afternoon, I am taking a summer florals flower arrangement class! I have to ask. How many of you meal plan? If you don’t meal plan, what do you do? Obviously different things work for different families. . I know that when I get busy, I have to plan our meals and shop accordingly or when dinner time rolls around, I will be staring into the fridge or pantry scratching my head.

Monday
Peach Caprese Quesadillas from Flavor the Moments.
Tuesday
Creamy (No Cream!) Corn Chowder from greens & chocolate.
Prep Ahead: You can chop the veggies and cook the bacon in advance. This is a great recipe for fresh sweet corn!
Wednesday
Lemon Garlic Shrimp from Spoonful of Flavor.
Meal Tips: Enjoy as a meal on its own or serve with a side of fresh or steamed vegetables.
Thursday
Strawberry Salad Tart from me!
Prep Tips: Make sure your puff pastry dough is defrosted ahead of time. I like to place mine in the fridge overnight and I simply use it the next day.
Friday
Roasted Vegetable Turkey Frittata from Lauren Kelly Nutrition.
Prep Tips: Cook turkey (or chicken) ahead of time or use rotisserie chicken.
I definitely meal plan. If I don’t, everything falls apart by Monday evening. You can’t have kids in the house and not do it! Well, maybe you can, but it makes life harder. And shopping on Sunday, as much as I hate it, is also key.
