Healthy Weekly Meal Plan 7.9.16! A healthy weekly meal plan featuring Open Faced Eggplant Parmesan Sandwiches, a Taco Pizza, Grilled Chicken Kebabs and more!

By the time you guys read this post, I will be in Baraboo, WI running this 10k. It’s going to be a more strenuous race than I’m used to. It’s not on a street or nice flat path  . there’s going to be more terrain and some altitude that I will have to deal with. Here was the description of the race: “Dances with Dirt continues to lure runners over to the dark side. Not a Peter Cottontail Bunny Trail run but an insane test of human endurance with muscles on fire and a finish line that will leave you beaten to a pulp but totally satisfied! Expect a day that leaves you knowing you are fully awake, alive and living life in full color out near the crumbling edge.”

I’m not scared at all.

Hopefully I’ll be posting a “I finished” photo somewhere on social media so watch for it. And be sure to check out the fabulous line-up for this week’s meal plan. I’ll be back on Monday with something fabulous and a new video!

Monday

Open Faced Eggplant Parmesan Sandwiches from greens & chocolate.

Prep Ahead: There’s really no need to prep ahead for these. Serve with more grilled veggies for an easy no-oven meal!

Tuesday

Taco Pizza from Spoonful of Flavor.

Vegetarian option: You can omit the ground beef, use tofu instead or increase the amount of veggies.

Grilled Chicken Kebabs from me! You guys need to try this one!

Vegetarian Option: Skip the chicken and just load on more veggies!

Thursday

Squash Noodles with Kale Arugula Pesto and Roasted Chickpeas from Lauren Kelly Nutrition.

This recipe is already vegan!

Shaved Asparagus Ricotta Flatbread from Flavor the Moments.

Prep Ahead: The pesto sauce and shaved asparagus may be done in advance.
