Loaded Baked Sweet Potato with Pulled Pork, cheese, baked beans, pickled jalapeños and more!!! So delicious and filling! I hope you try this! I might like this better than the Russet potatoes! 

Continuing my sweet potato kick! I’m back with this loaded beauty. After trying Jacket Potatoes and adding the baked beans, I think I’m in love. I love beans and have liked baked beans with BBQ or ribs and brisket, but I’ve never had them with a baked potato.

Loaded Baked Sweet Potato with Pulled Pork

I know the plate above just looks a mess but it’s absolutely delicious and might be my new favorite cold day comfort food. Meal prep a few baked sweet potatoes (and Russet potatoes too if you want), and the pulled pork and this meal/treat can come together very quickly. I used B&M baked beans (which had the least amount of sugar I think) but will definitely be on the lookout for the Heinz baked beans which everyone (who is British told me to find and use). 

I just love this loaded backed sweet potato with pulled pork because it hits on everything: sweet, savory, spicy and delicious. If you want more texture, feel free to add crispy bacon bits. I hope you try this!

Ingredients

  • 4 sweet potatoes washed, scrubbed, pat dry and pricked with a fork
  • olive oil extra virgin
  • salt and pepper
  • salted butter
  • pulled pork see recipe link below
  • 1 can baked beans heated on stovetop
  • sharp cheddar cheese freshly grated
  • green onions finely diced
  • 1 small red onion finely diced
  • hot and sweet pickled jalapeños*

Instructions

  • Preheat your oven to 375 degrees. Rub the olive oil over the sweet potatoes and season with salt and pepper. Place prepped sweet potatoes on a parchment paper lined baking sheet and bake for 45 minutes to 1 hour depending on the size of your sweet potatoes.
  • Cut sweet potato open and add the butter. Mash the butter into the sweet potato so it melts. Add some pulled pork, the beans, some freshly grated cheddar cheese, and garnish with the green onions, red onions and the hot and sweet pickled jalapeños.
