Pumpkin Pie Overnight Oats! Everything you love about pumpkin pie in overnight oats form! Protein packed and delicious! I love making these for my morning fuel!

If you ask me: I’m an cold overnight oats lover. Yes, even in the fall and winter. I just love overnight oats. I also love ice cold ice water and ice cold milk. Is anyone else with me?!

If you’ve been following me on social media, or watch my instagram stories, you know I consume a lot of protein. I’m all about the protein. Recently, I was in Paris with my sister and I was eating yogurt and and berries and commented on how delicious it was and that yogurt was a great source of protein. She was like What?! My sister didn’t know that yogurt is a great source of protein, as is cottage cheese and milk.

I was stunned that she didn’t know this.

Here’s my Pumpkin Pie Overnight Oats recipe! It’s super easy to make and so nutritious! Dairy milk is the most important ingredient here because it’s nutritious and a great source of quality protein. Dairy milk also contains B vitamins, supports immunity, is SO hydrating, contains 13 essential nutrients and is cost effective! I hope you try the recipe!

Servings: 1

Equipment

  • mason jar with lid or any container with lid

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1 to 2 tablespoons pure pumpkin
  • 1 tablespoon chia seeds or chia/ground flax blend
  • 1 scoop protein powder
  • 1 to 1 1/2 cups milk any kind
  • 1 tablespoon maple syrup
  • Toppings: chopped pecans, pepitas, granola, any type of nut butter

Instructions

  • Place all of the ingredients into a large mason jar, from the rolled oats to the protein powder. Pour in the milk and mix together until combined. I like a lot of milk so I add about 1 1/2 cups of milk but you can add 1 cup if you like your overnight pats thicker. Cover with lid and place into the refrigerator overnight.
  • The next morning, remove the lid and give everything one more stir. Add the maple syrup and the toppings of your choice and enjoy!
