The most fabulous salad with biscuit croutons! Yes, you heard that right! Biscuit croutons! Take your salad up a few notches and try this!
If you follow me on Instagram, you know I made cheddar cheese and chive biscuits for my daughter on Saturday. We’re a family of four but my husband and I are trying to take it easy on the carbs so we had about 3 or 4 leftover biscuits.
Leftovers? Yes, I know but I’m trying to eat better and smaller portions. This is what I’ve always done but quarantine threw me and suddenly, I was eating all the carbs and sweets. I started feeling really lethargic and tired. I used to workout every day. like, really workout. and now I’m lucky if I have the motivation to workout three times a week. I do go outside with my kids everyday but it’s not really exercise but it’s something.
So, anyways, yes, we had leftover biscuits and I got to make these biscuit croutons this morning.
Don’t worry, we are still indulging a bit here because these are Cheddar Cheese and Chive Biscuits. And they are freaking delicious.
Salad with Biscuit Croutons
I am still holding out for some semblance of summer and a summer trip or vacation. I know that might sound crazy right now but I’m thinking about July or August or even September if the kids don’t go back to school then. These are crazy and uncertain times, folks.
I know we’re probably not flying anywhere but we can drive. In my dreams, I’d love to go to the Hamptons and stay in a beautiful house with a gourmet kitchen and a pool. This one is only $1,200 a night (yeah right) no gourmet kitchen and I like the pool. This one is $1,700 and fits the bill. Super cute, love the kitchen and it has a pool. A girl can dream.
Will we be going anywhere this summer? Who knows. But until then, I’m eating salad. And lots of it. You guys might need to make the biscuits just so you can have biscuit croutons. You’re welcome.
Salad with Biscuit Croutons
Ingredients
For the Biscuit Croutons
- 3 leftover biscuits cubed
- 1 tablespoon olive oil extra virgin
For the Salad Dressing
- 1/3 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 2/3 cup olive oil extra virgin
- salt and pepper
For the salad
- lettuce Romaine, butter lettuce or fresh arugula
- cooked chicken cubed
- cucumbers sliced
- carrots sliced
- avocado
- candied pecans
- radishes thinly sliced
- jammy, or hard boiled eggs sliced
- strawberries sliced
Instructions
For the Biscuit Croutons
- Preheat your oven to 350 degrees. Prep a parchment lined baking sheet and toss the biscuit cubes on top, spreading on the baking sheet evenly. Drizzle with the olive oil and bake for about 10 to 12 minutes, or until lightly browned.
For the Salad Dressing
- In a jar, shake together or whisk together, the vinegar, mustard, and oil and season with salt and pepper. Set aside.
To assemble the salad
- Using a plate or dish, spread out lettuce, and then all of the ingredients on top. Top with the biscuit croutons and drizzle on the dressing. Enjoy!
