It’s a very interesting and sobering time right now in our country, in our world. The important thing, I think, is to remain calm and be prepared. As we have all either read online, or we have kids at home, so we know this information firsthand, a lot of schools across the country are closed for the next two weeks, some even longer.
WHAT I AM DOING
For me personally, it’s important right now to stay calm, stay on top of my family’s personal hygiene, nutrition/meals/exercise and practice smart social distancing. For me, I am still going to take my kids outside for walks or a quick bike ride and to get some fresh air but we will be smart about it. We will definitely have a lot more in-home movie and game nights.
FAMILY MOVIE NIGHTS
The kids pretty much get full control of the movie selection so that means I’m in charge of snacks. Today, I am sharing this Moon Cheese Chex Snack Mix! This is a big bowl of deliciousness for a movie night at home, a great snack to pack for work, or even a snack to keep in your car or gym bag to munch on after a workout.
Moon Cheese is an all-natural cheese snack that is high in protein, low in carbs and contains no sugar. Just 100% cheese. I mixed it up with some savory, cheesy, nutty Chex mix, nuts and pretzels and included some of my favorite Moon Cheese flavors! Cheddar Bacon Me Crazy, Get Pepper Jacked and Garlickin’ Parmesan!

Moon Cheese Chex Snack Mix
Ingredients
- 3 cups Corn Chex cereal
- 3 cups Rice Chex cereal
- 1 cup mini pretzels (can use gluten free)
- 2 cups mixed nuts almonds, cashews, walnuts and pecans
- 6 tablespoons unsalted butter cubed, you can also use ghee instead
- 1 teaspoon garlic powder
- 2 teaspoons ground dry parsley
- 1 tablespoon nutritional yeast more if desired
- 3 cups Moon Cheese any flavor
Instructions
- Preheat oven to 250°F. Using a very large mixing bowl, combine and mix together the Corn and Rice Chex cereal, mini pretzels and mixed nuts and set aside.
- Using a small saucepan over low heat, whisk together the butter, garlic powder until combined and melted. This should only take a few minutes. Remove from heat and drizzle all over the dry snack mixture in your large bowl and toss well to coat.
- Pour the mixture evenly onto 2 large (18 x13) rimmed baking sheet pans and sprinkle on the dried parsley. Bake for 1 hour, stirring every 15 minutes. Let cool for about 15 minutes.
- When cooled, pour all of the snack mix back into the large bowl. Sprinkle the nutritional yeast (feel free to add up to a ¼ cup if you’d like) and more dried parsley if desired and your Moon Cheese and mix together. Enjoy and store any leftover snack mix in airtight containers with lids or zip-top bags.
