It’s very rare that I get to cook from the same cookbook two days in a row. It almost never happens. A) Because I have no time; I need more than 24 hours in a day and B) every food blogger I know is writing a cookbook, plus there are new cookbooks coming out everyday and C) I have a stack (maybe 3) of cookbooks I haven’t even opened yet (yikes). I wish I was joking.
Well, this cookbook has my attention and these coconut bars had to be made.
I’ve been on a major coconut kick lately so these bars were the first things I wanted to make when flipping through Jennifer’s cookbook. If you follow me on Instagram and watch my stories, I made these bars the other day and showed the entire process.
If you love coconut, you have to try these! This was my first time working with coconut butter and it’s a dream. So rich and creamy and adds so much flavor and creaminess to these bars. You use the coconut oil and coconut butter to bind these bars together and then you freeze them.
Truth be told: the ingredients for these bars are expensive: the coconut oil, coconut butter, cashews and Medjool dates. . but, if you buy Larabars, you are already spending a lot so invest in these quality ingredients and make your own!
And if you don’t want to mess with removing the pitt from your Medjool dates, you can buy these dates and the pits are already removed. They are also less expensive and still, just as tasty.
