Hummus, Zucchini & Tomato Pizza

Food & Wine is one of my favorite food magazines. In their most recent September issue, they feature their best 3-ingredient recipes. I love that even Food & Wine is trying to simplify. . hey, I don’t know about you, but I can always use recipes that don’t require me to buy 20 different ingredients and shop at 3 different stores.

 

As soon as I saw their Hummus and Grilled Zucchini Pizza recipe, I knew I had to try it. I love hummus and pizza and have never put the two together. I did not grill my zucchini; kept it simple since I was making the crust. And if you’ve been following this blog, you know that I have to add either tomatoes or bell peppers to everything. . I also took this one a step further and attempted my first homemade thin pizza crust! This was pretty tasty if I do say so myself. . but I definitely need to buy a pizza stone. Will definitely buy one for next time.

 

“Prepared hummus that comes with a scoop of chopped garlic on top (like the kind sold by Sabra) is the secret here: The garlic gets mixed with oil to marinate the zucchini, while the remaining garlic and hummus flavor the whole pizza.”

Hummus, Zucchini & Tomato Pizza

ingredients

  • One 7-ounce container of roasted-garlic hummus
  • 3/4 cup extra-virgin olive oil, plus more for greasing
  • Salt
  • Freshly ground pepper
  • 3 medium zucchini (1 1/2 pounds), thinly sliced
  • 2 tomatoes (any kind); thinly sliced
  • Freshly grated Parmigiano-Reggiano
  • Two 8-ounce balls pizza dough; for homemade dough click here
  • Special equipment:
    • Pizza stone or a baking sheet
    • Parchment paper or foil
    • Rolling pin

directions

  1. Set a pizza stone in the oven and heat the oven to 500° for 30 minutes. Scoop the garlic from the top of the hummus into a small bowl and stir in the 3/4 cup of olive oil. Season with salt and pepper. Transfer 3 tablespoons of the garlic oil to a large bowl. Add the zucchini and toss to coat. Whisk the hummus into the remaining garlic oil and season with salt and pepper. (if your hummus doesn’t have garlic, you can roast some yourself or omit)
  2. Lightly rub 2 sheets of parchment paper with oil. Stretch or roll (with a rolling pin) each ball of pizza dough into a 12-inch round on each sheet. I was not able to perfect the round crust, but hey that’s the beauty of homemade pizza crust right?
  3. Brush each round with one-fourth of the hummus and top with the zucchini and tomatoes. Sprinkle the parmesan cheese on top. Slide 1 parchment sheet onto the hot stone or baking sheet and bake the pizza for about 8-10 minutes, until the crust is browned. Transfer the pizza to a work surface and drizzle with some of the remaining hummus if desired. Cut into slices and serve. Repeat with the remaining pizza dough.
