Peanut Butter Rice Krispie Treats with Chocolate! Nothing like an old childhood favorite! This rice krispie treat variation is incredibly easy to make! Mix it up by adding some peanut butter or chocolate chips, or dipping into melted chocolate.

Quarantine has me cooking, baking and snacking non-stop. Last week, I was not myself. Eating candy, snacking on chips and just letting myself go. It’s all good. I’m not beating myself up. Surprisingly, I have not consumed any alcohol at all, with the exception of spiking my whipped coffee. No wine, no cocktails, just a lot of sugar and sweets. .  which isn’t any better but again, I’m not beating myself up. These are strange times. I’m doing what I can to keep myself going.

It’s funny though, I’ve never been much of a candy eater. But now, all of a sudden, I want all the jelly beans and sour patch kids. Please tell me I’m not alone. It doesn’t help that we live right next to a Wawa where I can get candy in like 5 minutes.

My sweet tooth cravings are going crazy.

Peanut Butter Rice Krispie Treats with Chocolate

Like these root beer floats, I haven’t made a variation of rice krispie treats in ages. But, when in the cereal aisle last week, I had the sudden urge to make these. This recipe works with any kind of toasted rice cereal. If you were watching my stories last week, I made these with organic brown rice toasted cereal from Whole Foods.

I know there are very strong feelings about the ratio of cereal to marshmallow. I lean towards not liking too much marshmallow. Are you with me?

Peanut Butter Rice Krispie Treats with Chocolate

My version uses the entire 12 oz. box of Rice Krispies. Feel free to only use 6 to 9 cups if desired. This will give you a stickier Rice Krispie Treat.

Ingredients

  • 1 stick unsalted butter cubed
  • 1 (16 oz bag) mini marshmallows
  • 1/4 cup creamy peanut butter + more if desired
  • 1 pinch kosher salt
  • 1 (12 oz. bag) Rice Krispies cereal or any Toasted Rice Cereal
  • melted chocolate*

Instructions

  • Line a 9×13 inch baking dish with parchment paper and lightly grease the parchment, or grease/butter your baking dish. Set aside.
  • Using a very large pot, melt the butter over medium heat. Once melted, add the marshmallows. Stir the mixture, using a rubber spatula, until the marshmallows are almost completely melted. Add in the peanut butter** and mix until combined.
  • Turn off the heat and add the salt, stir and pour in the cereal and mix quickly to combine everything. Make sure all of the cereal is coated with the marshmallow mixture.
  • Transfer the mixture to your prepared baking dish. Using a rubber spatula (greasing it if needed), spread the mixture into the baking dish, using your rubber spatula to press down into the dish. Let sit for at least 1 hour at room temperature. Cover with saran wrap if leaving out for more than a few hours.
  • When ready, carefully lift the rice krispie treats (in one piece) out of the pan and cut into squares. Dip one corner of each into melted chocolate and let cool on parchment paper. To store: After cutting into squares, I wrap any leftover individual squares with saran wrap. (I wrap them individually. They are best 3-4 days after making.) Enjoy!

Notes

*I melted 1/4 bag of semi-sweet and 1/4 bag of bittersweet chocolate morsels.
**A 1/4 cup of creamy peanut butter gives you a subtle peanut butter flavor. Feel free to add a 1/2 cup for a more pronounced peanut butter flavor.
