Simple Smoked Salmon Salad with pickled red onions. Super easy and you can throw this salad together in under 5 minutes. If you like smoked salmon, you have to give this salad a try!
Smoked salmon on an everything bagel is my go-to order always when I’m at a bagel shop. And come to think of it, this might be the first time I’ve had smoked salmon without a bagel. I’ve been eating more protein now than I ever have and you can only eat chicken for so many days before getting sick of it. Chicken, beef, ground beef patties, turkey, ground turkey, fish, salmon and tofu. You name it, I’ve eaten it in just these last 4 weeks.
Next week, I’ll probably move on to beans. 🙂
The smoked salmon in this salad was so delicious. The saltiness adds flavor and compliments the fresh, crunchy cucumbers, picked red onions and lettuce. I should have added avocado. I don’t know what I was thinking. I was just trying to get my lunch ready so I could eat!
What Is Smoked Salmon?
Many people confuse smoked salmon for lox. The difference is that lox is cured, but smoked salmon goes through the process of smoking. Both are usually eaten on crackers or bagels along with cream cheese and other toppings.
If you don’t have pickled red onions on hand for this salad, I highly recommend adding something sour and crunchy like pepperoncinis or banana peppers. I hope you give this salad a try!
Simple Smoked Salmon Salad
Ingredients
For the dressing:
- 1 heaping teaspoon Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup olive oil extra virgin
- salt and pepper to taste
For the salad:
- romaine lettuce chopped
- cucumbers sliced
- smoked salmon chopped
- pickled red onions
- avocado sliced or cubed
Instructions
- For the dressing: whisk together all of the ingredients until well combined. Taste and adjust anything as needed.
- Assemble the salad and serve with the dressing. Enjoy!
