Ingredients
For the dressing:
1/3cupapple cider vinegar
1tablespoonDijon mustard
2/3cupextra virgin olive oil
1/2tspkosher saltmore or less, as desired
1/4tspFreshly ground black peppermore or less, as desired
For the salad:
1headromaine lettucecoarsely chopped
4hard boiled eggs or jammy eggs*peeled and quartered
12ozcooked chicken breastdiced or cubed
8slicesthick cut baconcooked and cut or crumbled
1avocadothinly sliced
5oz.crumbled blue cheese
2roma tomatoesdiced (you can also use cherry tomatoes)
1cuppecans roasted if desired
Fresh chivesfinely diced
Instructions
In a jar, shake together or whisk together the vinegar, mustard, and oil and season with salt and pepper.
On a large platter, spread out lettuce, and then add rows of all the ingredients: pecans, jammy eggs, chicken, bacon, avocado, blue cheese, and tomatoes.
Season with salt and pepper, drizzle with dressing, garnish with chives and enjoy!
