Instant Pot Pulled Pork

Ingredients

For the dry rub:

  • 3 tablespoons light brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon mustard powder
  • 1/2 teaspoon ground cumin
  • Kosher salt and freshly ground pepper

For the pork:

  • 1 to 2 tablespoons olive oil extra virgin
  • 3 to 4 lbs. pork loin or pork shoulder cubed or cut in half*
  • 1 small onion chopped or sliced thin, optional
  • 1/2 cup apple cider vinegar
  • 3 cups chicken stock
  • 2 tablespoons Worcestershire sauce

Instructions

For the dry rub:

  • Combine the brown sugar, paprika, mustard powder, cumin, salt and pepper in a small bowl. Rub the mixture all over the pork, on both sides. Let sit for about 20 minutes if possible.

For the pork:

  • Turn your instant pot on to the sauté function on high heat. After a minute or two, add the oil and add the pork and cook, turning or sautéing, until browned on both sides, for about 5 minutes. Add the onion (if using) while you are browning the pork and cook until tender.
  • Turn the sauté function off and add in the apple cider vinegar, chicken stock and Worcestershire sauce. Mix and place the lid on and turn to lock closed. Pressure cook on high pressure for 40 minutes. When the cooking time is up, allow the pressure to release naturally for 10 minutes, then do a quick release.
  • Carefully remove the lid and remove the pork from the instant pot and shred with two forks. If not using all of the pork right away, I like to store the pork with the liquid in an airtight container in the fridge.

Notes

*pork can be cubed or simply cut in half to fit into the pressure cooker.
