Eggs with Miso Sesame Ginger Dressing

I like my eggs cooked for 8 to 9 minutes, but if you want a jammy egg or soft boiled egg, go for it! I typically do 7 minutes for jammy eggs and 6 minutes for soft boiled and if you make them this way, you need to bring the water to a boil first and then slowly lower the eggs into the water.

Ingredients

  • 3 to 4 large eggs
  • kewpie mayonnaise
  • Miso Sesame Ginger Dressing see clickable link above
  • furikake

Instructions

  • How to make your hard boiled eggs: Place your eggs into a small pot and fill with water. Bring to a boil on your stovetop, cook your eggs for 8 or 9 minutes (see notes above). Immediately after cooking, place the eggs into an ice bath and peel within 1 to 2 minutes. My trick for easy peeling is to not leave the eggs in the ice bath for too long.
  • Slice the eggs in half lengthwise, top with some kewpie mayonnaise, some of the Miso Sesame Ginger Dressing and sprinkle on some furikake. If you don't have furikake, crush some salted nori over the top and add some sesame seeds. Enjoy!
