Ingredients
5earscorngrilled and kernels removed
2 to 3piecesgrilled zucchinioptional
1/2cupfresh cilantro leavesfinely chopped
1/3cupred onionfinely diced
1jalapeñoseeded and chopped
3 to 4dashesTabasco, Cholula or similar hot sauce
1 to 2teaspoonsEverything But The Elote Seasoning Blend*
2dashesTajín seasoning
1/2 to 1teaspoongarlic powder
2 to 3tablespoonsmayonnaise + more if desired
2 to 3 tablespoons2% plain Greek yogurt+ more if desired
Cotija or feta cheesefinely crumbled
juice from 1 lime
serve with tortilla chips
Instructions
Using a large mixing bowl, mix together all of the ingredients from the grilled corn to the fresh lime juice. Mix together, taste and adjust any ingredients as needed. If a creamier Mexican Street Corn Salad is desired, add more mayo and yogurt. Serve with tortilla chips and enjoy!

*If you don't have the Everything But The Elote Seasoning Blend, add cumin, chili powder, and garlic powder to taste.
