If you don't want to make the Green Goddess Dressing, you can simply top these with coconut aminos, or a soy sauce, grated ginger, sesame oil and brown rice vinegar mixture. Green Goddess Dressing from Baked by Melissa can be found here. I just added 1/2 an avocado.

For the Green Goddess Dressing:
juice of 2 lemons
1/4cupolive oil extra virgin
2tablespoonsrice vinegar
2clovesgarlic
1smallshallot

1/2ripeavocadooptional
1/4cuppecans, walnuts, cashews or nut of choice
1cupfresh torn basil leaves
1cupbaby spinach
1/3cupnutritional yeast or parmesan cheese
1teaspoonkosher salt
Instructions
For the Turkey Lettuce Cups:
Heat the olive oil in a large sauté pan over medium high heat. Add the lean ground turkey and cook until no longer pink. Add the onions, garlic, ginger, zucchini and mushrooms and cook until tender, for about 4 to 5 minutes. Season with salt and pepper and remove from heat.
For the Green Goddess Dressing:
Add all liquid dressing ingredients to a blender, then add the dry dressing ingredients and blend until smooth.
To serve: place some of your cooked turkey mixture into a piece of lettuce and top with some of the dressing. Enjoy!
