Super Simple Cucumber Tomato Salad

The longer you let the cucumbers and tomatoes hang out in the dressing, the better this salad will taste. Since the dressing is oil based, don't refrigerate this. Make this a few hours in advance, mix and let sit out at room temperature. You can let it sit on a bed of ice if you want the salad cold but it's fine just sitting on your countertop at room temp. Serve and enjoy!

Ingredients

  • 5 medium plum tomatoes halved lengthwise, seeded (if preferred) and diced (or a variety of heirloom cherry tomatoes)
  • 1 english cucumber or any crunchy cucumbers halved lengthwise and thinly sliced or diced
  • 1/2 small red onion diced
  • A generous drizzle of extra-virgin olive oil about 1 to 2 tablespoons
  • 2 splashes apple cider vinegar
  • Coarse salt and black pepper
  • fresh dill optional

Instructions

  • Combine the tomatoes, cucumbers, and red onions if using, in a mixing bowl. Drizzle on the olive oil and apple cider vinegar* and season with salt and pepper. Sprinkle on some fresh dill.
  • Let stand for about 15 to 20 minutes. Re-toss and serve salad and enjoy!

Notes

*Another dressing variation I make if you want more flavor and tanginess: Mix 1-2 teaspoons of Dijon mustard with a few splashes of apple cider vinegar (or red wine vinegar) and add about a 1/2 cup of good quality extra virgin olive oil. Whisk together. Season to taste with kosher salt and pepper. Taste and adjust any ingredients as needed.
