Cobb Salad Collard Green Wrap

Ingredients

For the Thousand Island Dressing:

  • 1 cup mayonnaise
  • 1/4 cup onion pulsed or blended into small pieces or finely chopped
  • 2 to 3 tablespoons ketchup
  • 2 to 3 tablespoons sweet pickle relish
  • 1 teaspoon lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt + more if needed

For the Wrap:

  • 1 large sized collard green leaf stem removed*
  • cooked chicken breast or rotisserie chicken sliced
  • romaine lettuce chopped
  • 1 slice tomato
  • 1 large hard boiled egg sliced
  • 1 to 2 strips crispy bacon
  • olive oil extra virgin
  • freshly cracked pepper

Instructions

For the Thousand Island Dressing:

  • Mix by hand and combine all of the ingredients. Taste and adjust anything as needed. Set aside.

For the Wrap:

  • Place the collard green leaf on a plate with a damp paper towel over it and microwave for 30 seconds. Place on your cutting board back side up. Spread some of the thousand island dressing in the center of the wrap. Top with the chicken, lettuce, tomatoes, hard boiled egg and crispy bacon. Lightly drizzle some olive oil and garnish with some freshly cracked pepper.
  • Fold up and over from the bottom up, tuck in the sides and fold over to close. Slice in half if desired and enjoy!

Notes

*I also like to thin out the back of the stem (that's still attached to the leaf) if the stem is really thick
