Using a small pan over medium heat, add the avocado oil. After a minute or two, add in the whisked eggs and turn the heat to medium low. When you start to see the outer edges of the eggs being cooked, use a rubber spatula to bring the eggs in from the outer edges in and repeat. Keep doing this until the eggs are at the consistency you want. I don't flip my eggs but you can if you want to fully cook your eggs on both sides.
Add the cottage cheese on top over half of the eggs and fold over the other half, covering the cottage cheese. Remove from heat and season with salt and pepper, garnish with the green onions and fresh dill and add a light drizzle of the chili oil olive oil if using. Enjoy!
