Asian Noodle Salad with Edamame

This dressing can easily be doubled to make more if you want to dress your noodle salad more.

Ingredients

Miso Sesame Ginger Dressing:

  • 1 tablespoon white miso
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 1/2 tablespoon fresh ginger finely grated
  • 2 tablespoons water
  • 1/4 cup canola oil  or other neutral flavored oil

For the noodle salad:

  • 1 package rice noodles cook according to package instructions, drain and rinse
  • pan fried tofu cubed
  • romaine lettuce shredded or chopped
  • carrots julienned
  • edamame
  • nori

Instructions

  • Whisk together all of the dressing ingredients and taste. Adjust anything if needed and set aside.
  • After prepping and making the pan fried tofu and noodles, assemble your salad bowls: place noodles into a bowl, arrange lettuce, carrots, pan fried tofu and edamame on top. Drizzle with the dressing and garnish with crushed nori. Mix together and enjoy!
