Ingredients

  • 8 oz somyeon (thin wheat noodles)
  • 1/4 cup kimchi brine (kimchi liquid)
  • 1/4 cup gochujang
  • 2 tablespoons sugar
  • 2 cloves garlic minced
  • 2 to 3 tablespoons brown rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon low sodium soy sauce
  • 1/2 cup kimchi chopped
  • sesame seeds
  • cucumbers julienned or sliced thin
  • hard boiled eggs sliced in half lengthwise

Instructions

  • Bring a pot of water to a boil and add the noodles and let cook for about 2 to 3 minutes; read package instructions. Don't overcook them. Drain and rinse in cold water and set aside.
  • Mix together the kimchi brine, gochujang, sugar, garlic, vinegar, sesame oil and soy sauce. Taste and adjust any ingredients as needed. Using a large mixing bowl: add the noodles, pour in the gochujang sauce and add the chopped kimchi. Using your hands or tongs, mix together until the noodles are nicely coated in the sauce.
  • To serve: distribute the noodles into bowls, top with sesame seeds, the cucumbers and an egg. Mix together and enjoy!
