Instructions
To make the spicy mayo: mix together the Japanese mayonnaise and the Sriracha until blended and set aside.
Using a knife or scissors, make a cut on the tortilla from the bottom up, halfway only. Place all of your ingredients into "sections" of the tortilla. Starting with the spicy mayo, brush or slather on as much as you like in the lower left hand corner. Add your eggs and top with the furikake and green onions. Add the bacon and the spinach. You can place with spinach in the upper right hand section if you'd like. Close the tortilla by flipping up the spicy mayo section up and on top of the eggs, then fold over to the side and then fold the bottom part up to close.
Spread some butter on the closed tortilla on both sides and then cook in a pan over medium high heat for a few minutes, or until warmed and golden brown. Cook for a few minutes on the other side. Remove from the heat and enjoy! You can also cook this in a panini press.
