Sweet Potato Toasts and Oven Baked Bacon

Ingredients

For the sweet potatoes:

  • 2 sweet potatoes sliced lengthwise
  • olive oil extra virgin
  • salt and pepper
  • fried eggs
  • 2 ripe avocados sliced

For the bacon:

  • 6 to 8 strips bacon thick cut

Instructions

For the sweet potatoes:

  • Preheat your oven to 425 degrees. Place your sweet potato pieces onto a lined baking sheet and lightly drizzle with olive oil and season with salt and pepper. Roast in the oven for about 25 minutes. You can roast for 5 minutes longer for more caramelization if desired.
  • Remove from the oven. To plate: top with a fried egg or some sliced avocado. Season with more salt and pepper if needed.

For the bacon:

  • Line a baking sheet with foil. I like to use 2-3 sheets of foil in order to completely cover the baking sheet so clean up is easier. Place the bacon strips down on the pan, without touching in one even layer.
  • In the same 425 degree preheated oven, bake the bacon (on the lower rack) for about 15 to 20 minutes. Check the bacon after 15 minutes and bake for another 5 minutes if needed; continue baking for another 3 to 5 minutes if crispier bacon is desired.
  • Plate everything and serve with orange slices and enjoy!
