In a large skillet or pan over medium high heat, add 1 tablespoon olive oil and cook ground turkey until browned and cooked through. Season with salt and pepper. Remove cooked turkey to a plate and set aside.
Add 1 tablespoon olive oil and after a minute or two, add in the onion and garlic and sauté over medium heat for a few minutes, or until onions become tender. Add in the sliced mushrooms and the dried Italian seasoning and cook for a few minutes. Add the cooked turkey back into the skillet.
Stir in the spaghetti sauce, crushed plum tomatoes and the diced tomatoes. Bring to a boil. Reduce heat and let simmer, uncovered, for about 20 minutes.
Preheat oven to 350 degrees.
Using your GoodCook Oven-to-Table Stoneware baking dish, add in the cooked pasta evenly on the bottom. Top with the tomato sauce mixture in an even layer and sprinkle on the cheese, over the top. Bake in the oven for about 25 to 30 minutes, or until bubbly and heated through. Remove from oven and garnish with parsley, serve and enjoy!
