Cherry Chocolate Hazelnut Muffins

Ingredients

  • 1/2 cup sugar
  • 2 eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter melted
  • 1/4 cup buttermilk
  • 1 2/3 cups all purpose flour
  • 1 heaping cup hazelnut meal/flour or finely ground hazelnuts
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • a pinch salt
  • 2 1/2 cups sweet cherries pitted
  • 1 cup semi-sweet chocolate chunks or morsels
  • Special equipment suggested: a cookie scoop

Instructions

  • Preheat the oven to 375 degrees and line your muffin tin with paper or silicone cupcake or muffin cups.
  • Using a large mixing bowl, whisk together the sugar, eggs, and the vanilla. Add the melted butter and the buttermilk and whisk again.
  • Using a separate large mixing bowl, combine the flour, hazelnut flour, baking powder, baking soda, and salt. Mix with a whisk to remove any lumps. Add the cherries and toss to coat.
  • Pour the dry flour/cherry mixture into the wet ingredients, and mix well. Lastly, mix in the chocolate chips and using either two spoons or a cookie scoop, fill the muffin wells with the batter and bake for about 25 minutes or until a tester inserted in the center comes out clean. Transfer to a rack to cool for about 5-10 minutes.
