Spider Web Sugar Cookies

Ingredients

For the sugar cookies:

  • 2 cups whole wheat pastry flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1/2 cup 1 stick unsalted butter, room temp
  • 3/4 cup granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 egg

To decorate the cookies:

  • ¾ cup heavy whipping cream
  • 1 ½ cups semi-sweet chocolate chips or a blend of bittersweet + semi-sweet chocolate chips
  • White icing
  • Toothpick
  • Plastic spiders for fun

Instructions

To make the cookies:

  • In a medium bowl, whisk together the flour, baking powder and salt; set aside. In a large bowl, using an electric mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until light and fluffy. Beat in egg and vanilla until well blended. Add the flour mixture and beat on low speed until combined.
  • Divide the dough in half and shape into 2 disks. Wrap in parchment or wax paper and refrigerate until firm, at least 1 hour or overnight.
  • Preheat the oven to 350°F. Line 2 baking sheets with parchment paper. Working with one disk of dough at a time on a lightly floured surface, roll out dough 1/4 inch thick and cut out cookies with a floured 3 to 4 -inch round cookie cutter. Transfer to the prepared baking sheets, spacing them 1 inch apart. Repeat with remaining cookie dough.
  • Bake until cookies are just golden around the edges, for about 10 to 12 minutes. Transfer cookies to a wire rack and let cool completely.

For the ganache:

  • Place the chocolate chips into a medium sized mixing bowl. Using a small saucepan over medium-low heat, heat the heavy cream. Cook until small bubbles appear on the outside edge of the cream and pour the hot cream over the chocolate chips. Let sit for about 2 minutes. Then, using a wire whisk, gently stir until all of the chocolate is melted and the ganache is smooth.
  • To decorate your spider web cookies: Evenly spread some chocolate ganache on top of your cookie. Using the vanilla icing, starting from the center of the cookie, draw a spiral going in a circular motion until you have reached the edge of the cookie.
  • Use your toothpick the draw lines from the center down to create a spider web design; be sure to wipe your toothpick after each use to keep the spider web design clean. Place a plastic spider on top to complete the look! Enjoy!
