Long Life Noodles. This recipe is from Woks of Life but I have changed a few ingredients and changed the preparation of this dish.

Long Life Noodles

I love mushrooms so I add a lot in here. If you think this is too much you can simply just add 1 (8 oz) container of shiitake mushrooms.
*I used these noodles for this recipe but honestly, I think if you can't find Yi Mein noodles, even linguine or fettuccine noodles will work for this.

Ingredients

  • 1 (12 oz.) package noodles* see notes
  • 4 teaspoons regular soy sauce
  • 4 teaspoons dark soy sauce
  • 2 tablespoons oyster sauce
  • 1 1/2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 to 2 tablespoons vegetable oil
  • 1 small onion sliced
  • 2 to 3 cloves garlic minced
  • 2 (8 oz.) containers shiitake mushrooms sliced
  • 8 oz. Chinese chives or green onions cut into 2-inch long pieces
  • sesame seeds for garnish

Instructions

  • Bring some water to a boil and cook noodles according to package instructions minus 1-2 minutes. Drain noodles and set aside.
  • Combine ingredients: regular soy sauce, dark soy sauce, oyster sauce, hoisin sauce and the sesame oil and whisk together. Taste**, adjust anything as needed and set aside.
  • Using a wok or large pan over medium high heat, add 1 tablespoon vegetable oil, and after a minute or two, add the onions. Cook until softened and then add the garlic and toss together. Add the shiitake mushrooms and cook until softened. Add the chives or green onions, and toss together again and cook for a few more minutes.
  • Add in the cooked noodles and immediately pour the sauce over the noodles and toss everything together until the noodles are nicely coated in the sauce. Sprinkle with some sesame seeds if desired. Serve and enjoy!

Notes

*I used these noodles for this recipe but honestly, I think if you can't find Yi Mein noodles, even linguine or fettuccine noodles will work for this.
**You can add a little sugar but the hoisin sauce should add some sweetness. If you feel the sauce needs something else, you can add a splash of brown rice vinegar and some black pepper.
