Fruity Breakfast Cookies

Ingredients

  • 1 stick unsalted butter at room temp
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup cashew butter
  • 1 large egg
  • 3/4 cup all purpose flour
  • pinch of salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3/4 cup coarsely chopped cereal blend of Trix and Fruity Cheerios
  • 1 cup cereal blend of Trix and Fruity Cheerios; not crushed or blended
  • 1/4 cup rolled oats
  • 1/4 cup bittersweet chocolate chips

Instructions

  • Preheat oven to 350 degrees. Using your stand mixer, beat together the butter and the sugars, add in the cashew butter and mix again. Add the egg and mix again until combined.
  • In a separate mixing bowl, combine the flour, salt, baking soda, baking powder, cinnamon and coarsely chopped cereal.
  • With the mixer on low, slowly add in the dry ingredients until combined. Add in the cereal, rolled oats and chocolate chips and mix together (on a low setting) until just combined.
  • Place cookie dough balls on a parchment lined baking sheet, about 1 to 2 inches apart and bake for about 12 to 14 minutes, or until golden brown. Let cool for about 5 minutes before serving.
