Very Berry Sangria!!
 
If serving for a party, double the recipe. If using the Primula Flavor It Pitcher 3-in-1 Beverage System, you will need to use 2 bottles of wine.

Ingredients
  • 1 Bottle of red wine (I suggest a good table red wine)
  • 1-2 oranges; halved and sliced with rind left on
  • ½ cup blueberries
  • ½ cup strawberries; sliced
  • ½ cup blackberries or raspberries
  • ¼ cup brandy
  • 2 tablespoons sugar
  • 2 cups ginger ale (to be added right before serving); optional

Instructions
  1. Place all of the ingredients into a large pitcher except the ginger ale. Mix and refrigerate overnight. About 30 minutes before you are ready to serve, pour in the ginger ale if using and mix. The best Sangrias are chilled for about 24 hours in the refrigerator, really allowing the flavors to marinate into each other.

I’m not completely sure how this happened but our house is now the designated house to go to for popsicles, otter pops, cookies and candy.

 

OK, OK, I know why.

With my help, my oldest actually helped me pour the juice in. .  it was cool for her to watch and then, after about 1 minute, she went to go do something else. We obviously cook, bake and spend a lot of time in the kitchen together. This is perfect for us and a lot of fun to make. Celebrating Teachers and Office Depot’s REAL Change Project

I can’t believe it’s already May and the school year will be ending next month. I survived my daughter’s first year in school; Kindergarten. You might be laughing right now. .  yeah, yeah, it’s only Kindergarten you say but a whole helluva lot happens this first year. For starters, some of them will learn how to read, others, will begin to learn the process. They learn about math and science, start to gain their independence more, make new friends and feel like a big kid!

I’m celebrating my daughter’s kindergarten teacher, Miss Angela Patino. Miss Patino doesn’t know this but I knew she was the right teacher for my daughter that very first afternoon at “Meet the Teacher” night. This was right before school started and it was in August so it was warmer than usual here in Washington. I don’t think the school has air conditioning, which is very common here (even our new house doesn’t have A/C). You never really need it here except maybe for a few weeks in the summer. So, at the school that day, there was a loud fan blasting. As soon as we arrived, I noticed a child who was quite bothered by the fan and the loud noise it was creating. .  so much so that he would not even walk into the classroom. Miss Patino, who was meeting this child for the very first time (it was Meet the Teacher night remember), got down to his level and spoke very softly to him and listened. And then, proceeded to walk back into the classroom to turn the fan off. The boy came in shortly after that.

 

That is when I knew. I knew what kind of teacher Miss Patino was.

 

Caring. Observant. Trusting. Someone great for 5-6 year olds. Someone who the children would grow to love, admire and respect. Someone who takes control of the classroom simply by forming the letter “C” with her hand in front of the children. C = close mouth. My daughter taught me this at the dinner table one night. . . but it doesn’t work for me at home.  I think most of the girls in the classroom all want to be a teacher now when they grow up.

 

So, the year went on and at our first Parent/Teacher conference, Miss Patino told me how my daughter, Phoebe, would shy away when attention was on her and never really raised her hand during their morning circle time. This is pretty much how my daughter initially was in pre-school so none of this surprised me, nor really worried me. But what was amazing to see. .  as the school year progressed . .  was how much Phoebe blossomed and grew and became more comfortable and out-going even. To me, she gradually became a different girl. One who smiled, now would raise her hand and speak up in class and was excited about going to school. I think this is the result of a few things, but the main ones being: Miss Patino and Phoebe starting to become more confident in general. If you ever ask her what she likes about school or Miss Patino, she will talk your head off for about 10 minutes straight and then draw you a picture of Miss Patino. .  wearing big, blue basketball earrings. I have no idea where this came from.

 

I’ve written about education news and keeping yourself informed. .  I’m so grateful for the opportunity to write this blog post because it educated me on where school supplies and decorations/art/supplies for most classrooms come from. I’m sure all schools, school districts and PTSA’s all work a little differently and help out the teachers as much as they can, but for the most part, there are a ton of teachers out there spending their own money on classroom supplies.

Marshmallow Bars and a Product Review: Silpat Entremet Baking Pan

Sometimes, we all need a little craziness in our lives. .  to let loose a little and just indulge. Indulging for me, these days, usually involves baking. Something with a little sugar. . . or maybe a lot. Something with a little chocolate. Or a lot.

 

Regardless of what I am baking, I now always use my Silpat non-stick baking mat, my Silpain, if I am baking a delicious bread, or my awesome Sil-Eco round mat whenever I use my springform cake pan. I seriously use this all the time now. Silpat has become a brand that I use, love and trust when I bake. I first saw their new Silpat Entremet Baking pan on Facebook. If you’re not a fan of Silpat on Facebook, you should become one. If you already use their products, the FB page keeps you posted on news and new products.

So, when my Silpat Entremet Baking pan arrived, I got to work. Obviously, it’s from the makers of Silpat, so you know it’s a quality product and it’s good. I like the fact that I don’t have to use parchment paper or foil in a baking pan and just like all of the other Silpat products, there is very little mess and you simply rinse it off with water and wipe it clean with a damp towel or papertowel. My only problem was not being able to wait for my baked treats to cool. I got ahead of myself and couldn’t wait, which I usually do when I am baking- Don’t judge- and tried to remove my marshmallow madness from the pan too early- because you cannot cut anything IN the actual silicone pan- and, of course a corner broke apart and I proceeded to eat an entire corner section. This is why there are no photos showing the entire pan :)  So obviously, like any other baked treat, you have to wait until it has cooled significantly before trying to remove it from the Silpat Entremet pan, otherwise you might have a bit of a mess.

 

So, if you are looking for a new baking pan, I say, try this one out. You can also bake savory dishes inside like casseroles and mac n cheese . .  there is, in fact, a mac n cheese recipe on the box along with a Gourmet Brownie recipe on the box, which I made and they were delicious!

And for a sweet recipe: if you’re looking for a crazy, over-the-top, “dump all of your leftover chocolate chip, butterscotch, peanut butter morsels and marshmallows into it” bars, these are it, homie.   I will be the first one to admit these are a little crazy and loaded with sugar. .  but I’m not telling you to eat the entire pan here. Everything in moderation. And then share these goodies with friends and neighbors. I baked these before and these are the sweet treats that everyone always asks me for again and again.

To help solidify the bars more before cutting, after they have cooled a bit from coming out of the oven, pop the pan into the refrigerator to help harden more and then cut into squares.

Serves: 15

Ingredients
  • ½ cup butter (1 stick); melted
  • 2- 2½ cups graham cracker crumbs or Nilla Wafer crumbs (or a combination of both)
  • ½ can (7 oz.) fat-free sweetened condensed milk
  • 1 cup chocolate chips; any kind
  • 1 cup butterscotch chips
  • 1 cup peanut butter chips
  • 1-2 cups coconut flakes; sweetened or unsweetened
  • 2-3 cups mini marshmallows

Instructions
  1. Melt the butter in microwave-safe bowl and add the graham cracker (and/or Nilla wafer) crumbs to it. Stir to combine and press the crumb mixture into a parchment paper lined (or directly into your Silpat Entremet pan) 9 x 13 pan.
  2. Pour the fat free sweetened condensed milk over crumb mixture; don’t worry that you do not cover every inch of the crumb mixture. You will not be able to spread this because the condensed milk is extremely sticky. (Feel free to use the entire can but I only used half).
  3. Evenly disperse all of the chocolate, peanut butter and butterscotch chips over the condensed milk and crumb mixture. Then, sprinkle on your coconut flakes. Lastly, top everything with the mini marshmallows. Feel free to cover the entire top; this will help hold everything together even more.
  4. Bake at 350 degrees for 25-30 minutes or until top is starting to brown. (Start checking on the bars after 20 minutes.) Allow to cool, remove from pan and cut into squares. To help solidify the bars more, after they have cooled a bit, pop the pan into the refrigerator to help harden more and then cut into squares.

Looking For a New Home? Look No Further. BHI: Start New Buy Fresh.

 

 

I realize not everyone is in a situation where they can buy a new home, but if you are and if you are looking or if you are planning on buying in the future, this post is for you. And building new homes represents a growing economy and new jobs for people so I like this!

 

After my husband and I were married, I moved into his condo. We’re pretty traditional and were not living together before we got married so everything was different, new and exciting. Because we moved into my husband’s place, I never completely felt like it was our place. I just moved in. Me and all my stuff. But, at the time, it just made sense for us. He already owned his place and I was still renting.  And all we had to do was kick out his younger brother, have the place cleaned from top to bottom, figure out what furniture stayed and what got tossed, and how we were going to decorate. Easy enough, eh?

 

My husband is pretty handy. He fixes things. He loves going to Lowe’s and Home Depot. He likes wearing his tool belt. So, occasionally when something would need to be fixed, he’d bring that sucker out and get to work. There were a few times we had to call a real plumber or someone to look at the dishwasher. Our condo has a great view and I think this was why my husband purchased it. But it was a pretty old building and he did a lot of work on the place. Remember, he’s totally DIY. In fact, one of our favorite shows after we got married was a home renovation TV show and I swear, HGTV was on all the time at our place. The condo was fine for us as newlyweds and just for us. . . But then we became 3.

 

After we had our first daughter, like most people, we accumulated all the baby stuff that pretty much starts to take over your house. And then she became mobile. She was cruising around all over the place, and so we quickly realized we needed more space. We were living in Los Angeles and, if you live there, you know you have to pay big money to live close to the city. So, off we went. To the Valley. Where it’s freaking hot weather-wise, but you can get a bigger house with a backyard and maybe even buy a brand NEW house.

 

And that’s what we did.

 

We were actually just driving around so our daughter could sleep more in the car. Parents out there, I know you can relate. And we happened to come across a brand new housing development. We had only been semi-looking at used houses and I didn’t think we could afford a new house.  While we were walking through the model home, I was inwardly admiring the open floor plan and the decor and the newness of it all. I totally imagined myself living there. Dreaming. As we left, I thought “Oh, I wish we could get a house like this . .  well, one day.” We went back home, discussed everything, looked at our finances, made a spreadsheet because that’s what we do and my dream came true earlier than expected. We got a great deal on the house and so we went for it. We were home owners!

 

If you read my blog, you know we also recently relocated to the great state of Washington in 2012. Again, we had to go through the budgeting and house hunting process but this time, we did it the right way. We found a fantastic real estate agent. One who knew WA and all the neighborhoods really well; because we didn’t. We had over a month to find a house and took two house hunting trips as a family and the rest was handled by my husband. For us, since we have children, we purposely looked for houses in the school districts we wanted to be in. And originally, we were only looking to rent. I mean, we were brand new to WA and what if we picked the wrong neighborhood or found an area we liked better later? Well, long story short, we ended up buying – again- a brand new house, in a brand new housing development. This meant being a little farther out from the city, but that was fine by me.  Fortunately, I actually had friends who lived here who gave us some great advice and we got the school district and schools we wanted to be in. We are in a great neighborhood and I really love where we are. And I love our new house. I got my dream kitchen (more on this in another post), the kids got their playroom, and my husband got his big garage and study. Everyone is happy.

 

And although I love a good re-model or a fixer-upper, what’s great about buying a new house is that your house is move-in ready, which means there’s nothing to fix. And for my husband, meant hardly any trips to Home Depot, which saved us time and money. This worked out well for us because we were both starting new jobs and I, was mainly concerned about getting the kids acclimated to their new home, city and neighborhood. If we had to spend time on the house or if a lot of things needed to be fixed, on top of everything else, we would have been way too overwhelmed.  And the new house just allowed more time to breathe, unpack, settle in and explore our new city as a family. Everything is new and usually more energy efficient. And after looking at so many new houses, I feel like newly built homes are built for modern families, with open floor plans, more storage and more room to entertain. Which, for me, is a big plus.

Blueberry Crumble Granola Bars

Equipment: 9×9 square baking dish. When preparing to cut the bars: You can even place the bars into the refrigerator to help them cool faster. After removing from the oven, I let the bars cool for about 20 minutes before placing them into the refrigerator. I left them in there for about an hour so cutting the bars would be easier.

Ingredients
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • 1½ cups all-purpose flour
  • ½ cup cold unsalted butter (1 stick); cut up into small pieces
  • 1 egg
  • about ¼ teaspoon salt
  • zest from one lemon
  • ½ cup granulated sugar
  • 2 teaspoons cornstarch
  • fresh lemon juice from ½ lemon
  • about 2 cups fresh berries (blueberries + blackberries)
  • ½ cup of your favorite granola

Instructions
  1. Preheat your oven to 375 degrees F (190 degrees C). Grease a 9×9 inch square baking dish. Set aside.
  2. In a medium bowl, stir together the sugar, flour, and baking powder. Mix in the salt and lemon zest. Using a pastry cutter, mix in the butter and egg. The dough should be crumbly. Press down half of the dough into the prepared pan.
  3. In a separate bowl, mix together the sugar, cornstarch and lemon juice. Gently fold in the berries. Pour the berry mixture evenly over the crust. Then, mix in the granola into the remaining crumbly dough. Crumble the remaining dough + granola over the blueberry/blackberry layer. It’s ok if you have berries peeking out.
  4. Bake for about 45 minutes, or until the top is slightly golden brown. Remove from oven and let cool for about 20-30 minutes. Cool completely before cutting into squares.

Celebrating National Library Week and TeachHUB!

 

 

One of the main reasons or the big selling point for us in moving to this great state of Washington was the public school system here. WA has some of the top rated public schools and school districts on the West coast. This might sound surprising to some . . moving so my kids could go to a better school. .  but it’s not. A lot of people do this. Maybe not move to another state but I think educators and parents can relate with me on this one. We even chose our house (I’ll have another post on this next week) and neighborhood based on what school district we wanted to be in. Does this sound crazy?

 

Education is so important.

 

Why wouldn’t we set up our children for success and do everything possible to ensure their learning and growth? This was my first year as a parent with a child in elementary school (kindergarten) and it’s never too early to educate ourselves!  From the curriculum to getting to know your child’s teacher to the PTSA to learning about your school and school district to all the different academic programs available, the accelerated/gifted programs (you start testing your child in 1st grade!) to the latest in education news and technology. .  it can be a bit overwhelming. But I want and prefer more information than none.

 

Obviously, you have to do more than just making sure you child is attending a good school and learning. Many of my friends with older children have told me about the benefits of being active with our children and doing homework together.  But we’re not all stay-at-home-parents. A lot of my friends also send their children to after-school care where they help the kids with their homework. .  and hey, that’s ok. Do whatever works for your family.  Every family is different. Every family’s schedule is different. And, let’s be honest, sometimes we just do what we need to do to get through the day. If you are working full-time, you, as a parent, can still stay up-to-date and informed with online resources for education news. I recently discovered TeachHUB. TeachHUB.com provides the latest in education technology, news and tools. It’s a great FREE online resource for all K-12 teachers and parents. There are free lesson plans and great, informative articles. .  I just read “12 Ways to Keep Kids Motivated at the End of the School Year.”

It’s National Library Week!

I love our local library. Toddler Story time for Madeline. (Her current fave is Ten Chirpy Chicks). Books for both girls. Reading to them and getting Phoebe excited about reading. I want my kids to grow up enjoying and loving to read. And books for me as well! I think once I became a parent, I forgot the library wasn’t just for the kids. So, get out to your local library this week!  If you have kids, check out their events calendar. .  they have so many FREE events for kids, it’s great! And get your kids their own library card if they don’t already have one.

 

According to the teachers at TeachHUB.com: success in education starts with curiosity and curiosity starts at home. For National Library Week, encourage your kids to explore a topic they’re interested in learning more about. Sit down at a library and read together – and ask them what they learned!  Taking your children to the library and establishing that routine will hopefully become something they will want to continue to do as they grow older.

Cheddar Cheese and Chive Bread

I’ve really been challenging myself lately with baking bread. I’ve battled with yeast and I think I finally understand it and get it.  If you’re a first time baker, I’m here to tell you, give it a try! If you keep at it, you’ll get it. And you’ll have delicious bread to devour. The smell alone should be enough to convince you . . or better yet. .  the actual eating and enjoying part rocks.

I don’t know how long I’ve been waiting to bake a bread like this one. .  cheddar cheese and chives in a bread? What could be better? I felt like a real baker when I woke up at 6am to get started on this bread. Or wait, real bakers get up at like 4am huh? Close enough, right? For me, a perfect bread is soft and slightly puffy on the inside and firmer and crispier on the outside. With this bread, you also get the cheesy goodness and chives. .  ah, it’s so delicious! And I nearly fell over while these were baking in the oven. They smelled so good.

 

We just ate this plain and dipped a little in some olive oil. Delicious. My husband was so impressed and asked me to start baking bread more often.  I think I can do this! So, I’ve baked rolls, and bread in a loaf pan but I think there is something so beautiful about a free-form bread. At least that is what I am calling this one since I shaped it with my hands and just baked it on my new Silpain non-stick baking mat.

So, you heard me right. Silpain, not Silpat. Silpat has a non-stick baking mat specifically for breads, the Silpain! “Dough contains about 60-80% of water. When baking with dough it is important to use a SILPAIN® because of its perforated qualities. The water seeps through the mat, leaving a perfect crusty finish. Use this for your homemade biscuits, pizza and bread.” I can attest to this perfect crusty finish!

I’ve now used my Silpain baking mat 3 times in a week. I love it. My baking friends might shudder but I think I love my Silpain more than my Silpat. If you bake bread, this is definitely worth the investment!

My tips for this bread:

  1. Use bread flour; will make a difference. I used King Arthur’s unbleached bread flour.
  2. Use your favorite cheddar cheese for this recipe. If you can, shred your own cheese instead of buying the cheese pre-shredded.

 

Cheddar Cheese and Chive Bread

Please note the RISING TIME for the dough. First rise: 2 hours. Second rise: 30 minutes. This recipe makes 2 loaves.

Ingredients
  • ¾ cup plus 1 tablespoon whole milk (+ more if needed)
  • 1 (1/4-ounce) packet active dry yeast (2½ teaspoons)
  • 4 cups bread flour or all-purpose flour, plus more for dusting (I highly recommend using bread flour)
  • ⅓ cup granulated sugar
  • 1 teaspoon fine salt
  • 8 tablespoons unsalted butter (1 stick) + more for greasing
  • 2 large eggs
  • 2 cups shredded cheddar cheese
  • ½ cup fresh chives, finely chopped
  • egg yolk for egg wash

Instructions
  1. In a small saucepan, heat ¾ cup of the milk until warm to the touch but not hot (about 105°F to 115°F on an instant-read thermometer). Transfer the warm milk to a large mixing bowl and sprinkle the active dry yeast on top. Set aside for about 10-15 minutes to activate the yeast.
  2. Sift the flour, sugar, and salt together into a large bowl; set aside.
  3. In a small saucepan, melt the butter. Let the butter cool, then transfer to a medium bowl. Add the eggs and beat together. Using your electric mixer, stir the egg mixture into the yeast mixture until combined. Slowly add the flour mixture and mix on low speed. (At this point, if you feel like the dough is too dry, you can add a ¼ cup milk. You want the dough to be somewhat sticky). When well combined, gently fold in the cheddar cheese and chives. You can do this with your mixer or by hand.
  4. Remove your dough from the mixer and turn the dough onto a floured work surface and knead the dough for about 2-3 minutes only.
  5. Grease a glass bowl with butter and place the dough into the bowl and cover with plastic wrap. You can also coat the plastic wrap with butter (on the side that faces the dough if desired. Let rise in a warm place until doubled in size, about 2 hours.
  6. Prepare a parchment lined baking sheet or use your Silpain non-stick baking mat for breads on a baking sheet. After the dough has doubled in size, remove the plastic wrap and set it aside. Remove the dough from the bowl and set on a lightly floured work surface. It will deflate a little but that is fine. Using a knife or dough scraper, divide the dough into 2 pieces and shape into loaves with your hands. Place both dough loaves on the prepared baking sheet and cover with a towel or with the same plastic wrap from earlier. Set aside again and let rise in a warm place for about 30 minutes. Meanwhile, pre-heat the oven to 350°F and arrange a rack in the middle.
  7. When ready to bake, in a small bowl, beat together the egg yolk and remaining 1 tablespoon milk. With a pastry brush, lightly brush the egg wash over the dough and bake for about 30-40 minutes. Let cool before serving.

Baked Shells with Cauliflower, Zucchini and Taleggio Cheese

I used to think I had one of the pickiest eaters in the world. My oldest daughter. She started out like a champ. She was a huge baby and drank that formula like there was no tomorrow. She was literally a Michelin baby. I wish I was kidding but I am totally not. She had rolls like nobody’s business. And when we started on solids, she ate everything we put down on her tray. It was amazing. And easy. And then she turned 2. It all changed from there.

 

But now I know better.

 

Kids go through phases. Their eating preferences will change. So the cheese that she used to love, she might grow to dislike and turn away forever. I seriously don’t know how she cannot like cheese. Some kids are adventurous and some are not. And even though I know now what she likes and what she will eat, I still try to introduce new foods to her. And that’s what we did tonight.

 

I might have the only 5 year old who does not like mac n cheese.  Because I love it so much and want to make it more often, totally selfish I know, I have been determined to try different recipes and experiment. . . so I thought, what if I dice up some vegetables she likes, toss it all together and bake it? She didn’t go for it. She could smell the cheese, which apparently is appalling to her and – because we have a deal that she has to take at least 1 or 2 bites- took maybe two bites and turned it away. Are you kidding me? This baked pasta was delicious. And this is the first time I have tasted and cooked with Taleggio cheese. Oh my gawd! So good!

 

But my kid doesn’t like cheese so what was I thinking? Well, that’s ok. Everyone else ate it and we’ll try something new again next month.

 

The best part about this pasta was that I got to test drive my new countertop oven from KitchenAid. This truly is a countertop oven that performs like a full-size oven. This Countertop Oven bakes and broils at temperatures up to 450 degrees (F). And just like any good toaster oven, this toasts and warms food and has a removable broil pan with grill and nonstick interior for easy clean-up.

Baked Shells with Cauliflower and Taleggio Cheese

You can use 16 or 18 ounce sized ramekins or one big baking dish. And if you have reservations with cooking with white wine for the kids or if you simply don’t have any wine at home, use chicken stock.

Ingredients
  • Salt
  • about 2 cups cauliflower, diced
  • 1 tablespoon unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 1 small onion, finely chopped
  • 1 cup zucchini, diced
  • 1-2 garlic cloves, minced
  • 2 teaspoons minced fresh rosemary
  • Freshly ground pepper
  • ½ cup dry white wine (or chicken stock)
  • ¼ cup heavy cream
  • about 1 cup freshly grated Parmigiano-Reggiano cheese + more for garnish
  • 1 cup Taleggio cheese—rind discarded, cheese cubed
  • ½ pound (or 8 ounces) shell or seashell pasta, such as conchiglie
  • 3-4 tablespoons dry bread crumbs
  • roasted, seasoned asparagus tips as garnish (optional)

Instructions
  1. Preheat the oven to 450°. Bring a large pot of salted water to a boil and fill a large bowl with cold water. Boil the cauliflower until tender, for about 3 minutes only. Using a slotted spoon, transfer the cauliflower to the cold water and let cool slightly. Drain and pat dry; keep the cooking water hot.
  2. In a large, deep skillet, melt the butter in the olive oil. Add the onion, garlic and rosemary, season with salt and pepper and cook over moderate heat until softened, for about 3 minutes. Add the cauliflower and and diced zucchini and cook over moderate heat, stirring occasionally, until a little browned, about 5 minutes. Add the wine (or stock) and boil until evaporated. Remove the skillet from the heat and stir in the heavy cream, ½ cup of the Parmigiano and all of the Taleggio cheese.
  3. Return the water to a boil and add the pasta. Cook until al dente. Drain the pasta and return it to the pot. Mix the cauliflower and cheese sauce into the pasta and toss well. Taste and season with more salt and pepper if desired.
  4. To assemble in the ramekins: Fill each ramekin with the pasta about ⅔ way up and top with about 1 tablespoon (each) of the bread crumbs. Sprinkle the remaining Parmigiano-Reggiano over each one. If adding/using the asparagus tips, you can top with these.
  5. Bake the pasta for about 10-15 minutes, until the top is a little golden and crisp. Let stand for about 5 minutes before serving.
