Healthy Weekly Meal Plan 12.17.16! A healthy weekly meal plan featuring a Roasted Vegetable Strata, Cardamom Pear Bread with Almond Glaze, One Pot Beef Stroganoff and more!
Happy Saturday! How is everyone doing? Today we’re having a family outing and going to see A Christmas Carol at the Overture Center here in Madison. It’s suppose to snow all day so this should be interesting. I watched A Christmas Carol with Phoebe a couple of years ago and wanted to go again with the whole family. The Overture Center really puts on a great performance and I love the message of the play.
I’ve been feeling a little sick and run down. It’s the holidays so I guess this is to be expected. Still, I need to get more sleep, drink more liquids and take care of myself. We head out of town next week and being sick and congested on a plane is no fun. So, I’m hoping I feel better by then.
I can’t believe Christmas is right around the corner. . where did this month go? It’s flown by! I still have some Christmas Crack and cookies to bake! Yes, more.
In all the holiday craziness, let’s try to take some time to just sit, reflect, be thankful and think about how fortunate we are. We have air to breathe and loved ones around us. I was reading a post I wrote a year ago. . “We don’t go overboard with the gifts and I was actually starting to second guess myself. Should we buy more presents for the girls? Should we make sure the presents are overflowing from under the tree? Is that what it’s all about?”
For me, the holidays are about spending time with family, giving thanks for what we have and showing appreciation for friends, family and all the people who are in our lives. Now, don’t get me wrong, I love giving gifts. Wrapping presents, thinking about special gifts and also making homemade gifts but this is not what the holiday season is all about.
Still, it makes me smile when I see my kids’ faces light up when they see presents under the tree but we don’t go big on the gifts. Just a few.
We have a fabulous line-up of food and baked goodies for you this week! If you have a chance, make the Roasted Vegetable Strata and the Cardamom Pear Bread with Almond Glaze .. doesn’t that sound magical? The One Pot Beef Stroganoff is also a must make and the Overnight French Toast Casserole from Lauren also looks amazing! That and the Cranberry Orange Baked Oatmeal from Marcie would both be great options this week when you’re with your family for the holidays!
