I’m still in Asian food mode.. soba noodles are a household favorite. . and I love them because they are so quick and easy and packed with minerals, vitamin B, fiber and protein. This dish is extremely easy to make. I did take it one step further and replaced my usual “tofu” protein with chicken.
Why?
Because I had a fabulous chicken marinade I couldn’t wait to try.
The good folks over at Stubb’s BBQ sent me some fabulous dry rubs, marinades and BBQ sauces. I’ve mentioned this before on the blog, but I’m originally from Texas, born and raised in Dallas, so I love BBQ, ribs, steak and meat. “Stubb’s Bar-B-Q sauces, marinades and rubs are all natural and gluten free. Stubb’s never uses artificial preservatives or colors, giving your barbecue the authentic, Legendary Texas Flavor that Stubb is known for.” Stubb’s has been around since 1968. That’s Legendary Texas Flavor alright.
We tried the Steak Spice Rub on Christmas Day on some rib eye and NY strip steak and it was delicious! I used to be all about the marinades when it came to steak but now I am all about dry rubs on steaks, especially if you are grilling. Oh. So. Good.
Today, I have to tell you about this Chicken Marinade. Citrus and Onion. Brown Sugar, Salt, Granulated Onion, Natural Flavors (Corn Syrup Solids, Lime Juice, Lime Oil), Spices, Granulated Garlic, Whole Yellow Mustard Seeds . . just to name a few ingredients. .
I used boneless, skinless chicken thighs.
I normally marinate my chicken in a big, gallon sized ziploc bag but I wanted to show you the marinade in all it’s glory.
You only need to marinate the chicken for an hour if you’re strapped for time but longer is better and will give you more flavor. I actually marinated my chicken thighs overnight. You can also baste with the marinade as you grill or bake. This marinade also works in slow cookers, stir-frys or skillets.
Here’s my glorious, juicy chicken.
This marinade was delicious! You can obviously eat this with just about anything or even make a chicken sandwich but I chose to slice up my chicken and serve it on top of my soba noodles. Mixed with the zucchini, carrots and edamame, soy sauce and sesame oil. . it was amazing! And just on it’s own, just popping this chicken into my mouth was delicious! You’ve got to try this marinade.

Soba Noodles with Marinated Chicken
Ingredients
- 1 - 1 1/2 lbs. chicken thighs boneless, skinless
- 1 bottle Stubb's Chicken Marinade
- 4 ounces soba noodles Japanese buckwheat noodles
- 2 tablespoons sesame oil + more if needed
- 2-3 tablespoons low sodium soy sauce to taste
- 1½ tablespoons brown rice vinegar
- 2 tablespoons brown sugar
- 1 large carrot julienned and cut into inch long matchsticks
- 1 zucchini julienned and cut into inch long matchsticks
- shelled edamame
- dried seaweed nori, cut into strips (optional)
- sesame seeds to sprinkle on top
- For a spicy alternative mix in: 1½ tablespoons sweet chili sauce or sriracha sauce
Instructions
- Marinate your chicken in the Stubb's Chicken Marinade for at least 1-2 hours or overnight. Grill until the chicken is thoroughly cooked through, slice and set aside.
- Cook the soba noodles according to package directions (usually only 4-5 minutes), rinse, drain well and set aside.
- Combine the sesame oil, soy sauce, brown rice vinegar and brown sugar in a medium bowl and whisk together.
- Pour the soy sauce mixture over the soba noodles and mix to combine and coat the noodles. I prefer using disposable plastic gloves so I can mix with my hands. To serve: portion out the soba noodles into serving bowls, place the julienned carrots and zucchini and shelled edamame around the noodles and top with slices of the cooked chicken. Lightly drizzle more sesame oil and soy sauce over the top if desired. Top with dried seaweed and sesame seeds. Serve and enjoy immediately.

You can find brown rice vinegar at any Asian Market or Korean grocery store. The one I use is a Korean brand. You can also use red wine vinegar but maybe a tad less than what the recipe calls for. Mix, taste and adjust if necessary. I hope you give this recipe a try! 🙂

Just curious–as a vegetarian, it seems like this recipe would work equally well marinating tofu in Stubbs (unless the marinade is not vegetarian-fiendly). What do you think?

Hi Jenn,
Yes, you can use the marinade with tofu! I would try marinating and then pan frying or baking the tofu and then adding more marinade if desired while cooking too.
