Rock Star Brownies. Cakey, chocolatey and a little fudgy and covered in dulce de leche and sprinkled with sea salt. These brownies are everything you ever wanted and more!
So I had some leftover dulce de leche in the house. My husband was scouring the internet in search of the perfect sweet treat recipe so he could have more. This stuff is addicting. He showed me a few recipes but I already knew what I was going to do.
I baked these brownies.
And brownies are his favorite. Let me just say this: these are not regular brownies. These are something else. The brownie itself is pretty darn tasty but the dulce de leche and sea salt sprinkled on top put these in a whole different league. So, they only way I could think of describing them was to call them rock star brownies. These are the kind of brownies that you bite into, close your eyes and just enjoy them. They are cakey, chocolatey and a little fudgy and totally crumble if you try to eat one right out of the oven. And then you get the dulce de leche. You quickly open your eyes and look around to see if anyone is watching you. . because you might have your own When Harry Met Sally moment. And then you continue to eat more and suddenly realize you ate 3.
For me, these brownies taste best on Day 2. Try them and tell me what you think. I hope you enjoy and I will leave you with this. This is possibly the best, most well written script/commercial of all time. And when I think of rock stars, I think of Steve Jobs. (I kind of felt crazy for a split second when I was pouring on the dulce de leche. . like it was too much. Over the top. But I am so glad I did.)

Rock Star Brownies
Ingredients
- 10 tablespoons unsalted butter + more for the brownie pan slightly softened but doesn't have to be room temp.
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup cocoa powder
- 1/2 cup all purpose flour
- 1/8 teaspoon salt
- 1/2 cup dulce de leche
- course sea salt
Instructions
- Preheat the oven to 325 degrees. Lightly butter your brownie pan.
- Using your stand mixer, mix together the butter and the sugar for about 2 minutes until light and fluffy. Add the vanilla and the eggs (one at a time). Mix to combine. Add the cocoa powder, flour and salt and mix well. Stop and scrape the mixing bowl as needed to ensure everything is mixed together properly.
- Pour your brownie batter into the buttered pan and bake for about 30-35 minutes.
- Transfer to a wire rack to cool. When completely cooled, pour on your dulce de leche and sprinkle with sea salt. Cut and enjoy! This will make 6 ginormous brownies or 12 small ones.

Perfect, perfect way of using ddl. My favorite traditional birthday cake is a good dark chocolate one filled with ddl. But, this should be done while the cake is still warm so some of the dulce de leche seeps into the cake. Undescribable. And these brownies reminded me exactly of that! I will be making them Alice!

Ummm…what the frack?! I totally thought I had commented on this amazeball brownies! WHAT is wrong with me?! My eyes bugged out of my head the first time I saw the photos you posted on Facebook of these decadent brownies smothered in luscious dulce de leche. Nice touch on the sea salt sprinkle over top. I like to think that this recipe makes just ONE ginormous brownie that has my name on it 😉
